Aquesta temporada, el seu nou concepte culinari, Villa Sofia, eleva la seva proposta d&#8217;estiu amb la incorporaci\u00f3 d&#8217;un plat in\u00e8dit creat per \u00c1lvaro Salazar, l&#8217;aclamat xef al capdavant de Voro (guardonat amb dues estrelles Michelin i tres Sols Repsol).<br><br>Sota el nom de Villa Sofia by \u00c1lvaro Salazar, aquesta nova elaboraci\u00f3 \u00e9s tota una declaraci\u00f3 d&#8217;intencions que trasllada l&#8217;excel\u00b7l\u00e8ncia i el refinament de l&#8217;alta cuina al tarann\u00e0 elegant del nou restaurant, sense perdre de vista la seva ess\u00e8ncia purament mediterr\u00e0nia.<br><br><strong>Un homenatge al rebost de Mallorca<br><\/strong>La creaci\u00f3 dissenyada per Salazar consisteix en una deliciosa&nbsp;<strong>sopa freda de tom\u00e0tiga i taronja, acompanyada gamba vermella i ous de llissa<\/strong>. Concebuda especialment per a la temporada d&#8217;estiu, la recepta es construeix a partir de dos emblemes del territori: el tom\u00e0tiga de ramellet i la taronja de S\u00f3ller.<br><br>La base s&#8217;emulsiona curosament per oferir una textura fresca, vibrant i equilibrada. Per sobre, el xef hi disposa un delicat vel de gamba roja de Cala Rajada \u2014aclamada per la seva dol\u00e7or inconfusible\u2014 i ous curats de ll\u00edssa, que hi aporten un mat\u00eds sal\u00ed i una textura d&#8217;all\u00f2 m\u00e9s melosa.
