L&#8217;en\u00f2loga ens explica d&#8217;on surt la passi\u00f3 i com maridar\u00e0 els vins amb les propostes culin\u00e0ries de la cuinera Margalida Coll els propers dies 10 i 11 de juny al cicle <a title=\"La Bona Vida 2014\" href=\"http:\/\/gastronomicament.cat\/la-bona-vida-aprendre-cuina-duna-manera-saludable\">La Bona Vida<\/a> de la Universitat de les Illes Balears.<\/p>\n<p><strong>Com et vas introduir al m\u00f3n dels vins?<\/strong><img decoding=\"async\" class=\"alignright\" style=\"margin: 6px;\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2014\/05\/foto-mar-nicolau-enologa-petits-cellers.png\" alt=\"\" width=\"213\" height=\"620\" \/><br \/>\nPrimerament vaig estudiar Ciencies Quimiques a la UIB i despres volia estudiar una altre carrera de dos anys mes. Vaig mirar per fer Tecnic d&#8217;alimentacio i Enologia. Em van agafar a les dues facultats i em vaig decidir per enologia. Era un mon relativament desconegut per jo, si que m&#8217;agradaven els bons vins i arrel dels estudis vaig descobrir una gran passi\u00f3.<\/p>\n<p><strong>Qu\u00e8 ensenyar\u00e0s al cicle de la Bona Vida?<\/strong><br \/>\nFarem a cada sessi\u00f3 una presentaci\u00f3 de 3 vins explicant cada celler, cada vi i farem el tast i<br \/>\ndespres els combinarem amb els plats de na Margalida Coll<\/p>\n<p><strong>A qui recomanaries apuntar-se a aquest curs de cuina?<\/strong><br \/>\nA qualsevol persona que li agradi el m\u00f3n de la gastronom\u00eda i el vi ja que gaudirem d&#8217;una jornada amb bona companyia i aprendrem i provarem la bona cuina de na Margalida Coll del Restaurant Miceli de Selva.<\/p>\n<p><strong>Quins vins hi trobarem al cicle?<\/strong><br \/>\nTrobarem vins de s&#8217;associaci\u00f3 petits cellers que ser\u00e0n de DO Binissalem Mallorca, DO Pla i Llevant i Vi de la terra.<\/p>\n<p><strong>\u00c9s el primer cop que participes en el cicle de la Bona Vida?<\/strong><br \/>\nS\u00ed que \u00e9s el primer cop. En Pere Palou, organitzador del cicle, em va proposar la col\u00b7laboraci\u00f3 i em varen semblar unes activitats molt interessants.<\/p>\n<p><strong>Amb quins vins podem acompanyar la cuina de mercat?<\/strong><br \/>\nRealment la podem acompanyar amb qualsevol vi ja que es tracta de saber els ingredients del plat i la forma d&#8217;elaboraci\u00f3 i coccio per trobar un vi adient que maridi amb el plat. Si volem algun vi m\u00e9s exclusiu sempre es pot prendre un vi d&#8217;autor o un vi de finca.<\/p>\n<p><strong>Ens recomanaries un bon vi mallorqu\u00ed?<\/strong><br \/>\nJo sempre dic que el bon vi es el que li agrada a cada un. Per aix\u00f2 per recomanar un vi m&#8217;agrada saber els gustos de la persona a qui el recomano. Actualment a Mallorca hi ha uns 70 cellers que elaboren molts bons vins. A nivell personal podr\u00eda destacar l&#8217;estil de vinificaci\u00f3 de Vins Nadal, Biniagrau, Son Campaner, 4 kilos vinicola, Es Fangar, Toni Gelabert, Miquel Gelabert,&#8230; pero com dic \u00e9s molt particular.<\/p>\n<p><strong>Participes sovint en cursos i tallers de vins?<\/strong><br \/>\nDes de l&#8217;any 2004 em dedico a la comunicaci\u00f3 del m\u00f3n del vi colaborant amb associacins, escoles, vinoteques, bodegues, revistes, diaris i a nivell particular. De fet, estic posant en maxa una web, <a title=\"Palma Gourmet\" href=\"http:\/\/www.palmagourmet.com\" target=\"_blank\" rel=\"noopener\">www.palmagourmet.com<\/a>, on oferesc diferents activitats com cursos (Iniciacio al tats, Elaboraci\u00f3 de Vins, Maridatje, Monografics de vins dol\u00e7os, escumosos, destilats..), tastos dirigits, sopars maridatge, visites guiades a cellers, f\u00e0briques de sal, d&#8217;oli, cursos de jam\u00f3n, formatges, olis, sals, xocolates, flors,&#8230; tot per apropar aquest fantastic m\u00f3n a qualsevol persona que li
