{"id":18096,"date":"2016-10-06T10:13:25","date_gmt":"2016-10-06T08:13:25","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=18096"},"modified":"2022-04-07T11:06:15","modified_gmt":"2022-04-07T09:06:15","slug":"quinta-edicion-de-los-cursos-a4manos","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/ca\/quinta-edicion-de-los-cursos-a4manos","title":{"rendered":"Cinquena edici\u00f3 dels cursos a4manos"},"content":{"rendered":"<p>Un total de 16 xefs de Mallorca, Menorca i Eivissa participen en la cinquena edici\u00f3 dels cursos # a4manos organitzada per Chefs(in). Els cuiners ensenyaran a cuinar a professionals i aficionats en unes classes amb degustaci\u00f3 i maridatge que es duran a terme a l&#8217;Escola d&#8217;Hoteleria de les Illes Balears. De fet, els alumnes de l&#8217;EHIB tenen l&#8217;oportunitat de col\u00b7laborar en aquests cursos i de veure de prop com treballen aquests xefs reconeguts, alguns dels quals es van formar, com ells, a l&#8217;EHIB. La directora de l&#8217;EHIB, Maria Tugores, ha destacat diversos aspectes pels quals considera rellevant la celebraci\u00f3 d&#8217;aquests cursos: perqu\u00e8 s\u00f3n un exemple de col\u00b7laboraci\u00f3 entre el p\u00fablic i el privat, permeten relacionar la formaci\u00f3 amb l&#8217;empresa, posen en contacte els xefs i els alumnes, reforcen la relaci\u00f3 entre les illes i s\u00f3n un punt de trobada dels amants de la bona gastronomia.<\/p>\n<p>L&#8217;esquema dels cursos \u00e9s el mateix des que van comen\u00e7ar aquest cam\u00ed formativa. Dos xefs, m\u00e0 a m\u00e0, davant d&#8217;una classe de 40 alumnes m\u00e0xim, entre els quals hi ha professionals de la restauraci\u00f3 i molts aficionats. Cada curs t\u00e9 una tem\u00e0tica diferent Benet Vicens (Bens d&#8217;Avall) i Miquel Gelabert (Can March) cuinaran sopes; Tomeu Mart\u00ed (Arume) i Oscar Molina (Gran Hotel d&#8217;Eivissa), receptes &#8216;nikkei&#8217;; Marga Coll (Miceli) i Joan Canals (cocteler d&#8217;Ulisses) faran un men\u00fa &#8216;fingerfood&#8217;; Joan Marc Garcias (Restaurant Joan Marc) i Marc Fosh (Simply Fosh) faran un homenatge a Escoffier (cuiner, restaurador i escriptor culinari franc\u00e8s, que va popularitzar i actualitzar els m\u00e8todes de la cuina francesa tradicional, a principis del segle XX); Santi Taura i Joan Bagur (Rels) faran un men\u00fa basat en el formatge; Adri\u00e1n Quetglas i Andreu Genestra s&#8217;introduiran les esp\u00e8cies al m\u00f3n dol\u00e7; Silvia Anglada (\u00c9s Tast de na S\u00edlvia) i Marta Rossell\u00f3 (Sal de Coc\u00f3), cuinaran peix; i Andr\u00e9s Ben\u00edtez i Tomeu Caldentey mostraran els secrets de les salses i emulsions. Els xefs ensenyen a cuinar quatre plats (dos cadascun) que es presenten com el men\u00fa d&#8217;un restaurant (normalment, entrant, dos principals i unes postres) que els alumnes es mengen un cop cuinats. A m\u00e9s de les receptes de la cuina, el curs compta amb el maridatge de Vinamica i les explicacions de l&#8217;expert Javier Pons presentant les notes de tast; un vi diferent per plat. A m\u00e9s, l&#8217;experience manager de Marabans Coffee &amp; Tea, Joan Sim\u00f3, prepara un c\u00f2ctel amb caf\u00e8 diferent cada curs.<\/p>\n<p><strong>Luca Monzani: artista convidat <\/strong><br \/>\nEl pintor Luca Monzani (Tor\u00ed, 1968), resident a Palma, il\u00b7lustrar\u00e0 amb dibuixos originals les portades dels llibres de receptes que rebran els alumnes dels cursos # a4manos. Monzani recull aix\u00ed el testimoni d&#8217;altres artistes que ja han col\u00b7laborat amb Chefs(in) en aquests cursos, com Albert Pinya i Antonio Fern\u00e1ndez Coca. Luca Monzani utilitzar\u00e0 el carbonet amb un toc de color i donar\u00e0 a entendre, a la seva manera, cadascuna de les tem\u00e0tiques que els xefs duran a terme. Monzani ha explicat que s&#8217;ha imaginat els tra\u00e7os dels dibuixos com sabors.<\/p>\n<p><strong>Calendari dels cursos<\/strong><br \/>\n\u2022 11 octubre: Sopes. Amb Andr\u00e9s Ben\u00edtez i Tomeu Caldentey<\/p>\n<p>Tots els cursos es realitzen a l&#8217;aula mestre Tomeu Esteva de l&#8217;Escola d&#8217;Hoteleria de les Illes Balears (carretera de Valldemossa, km 7,2), en horari de 18 a 21 hores. El preu dels cursos \u00e9s de 50 euros, i inclou la formaci\u00f3, la degustaci\u00f3, el maridatge de vins i el llibre de receptes amb il\u00b7lustraci\u00f3 original del pintor Luca Monzani.
