Joan Roca explica que l&#8217;objectiu \u00e9s\u00a0<strong>donar visibilitat ramaders, agricultors, viticultors i productors d&#8217;aliments que tenguin el segell ecol\u00f2gic europeu<\/strong>, amb l&#8217;objectiu d&#8217;<strong>impulsar\u00a0una recuperaci\u00f3 econ\u00f2mica verda<\/strong>\u00a0despr\u00e9s de tota la crisi que s&#8217;est\u00e0 patint actualment.<\/p>\n<p>Alberto Cano, director de Pymes de BBVA, comenta que\u00a0<strong>no \u00e9s un premi amb una dotaci\u00f3 econ\u00f2mica<\/strong>, per\u00f2 ressalta que donar\u00e0 visibilitat als productors guanyadors perqu\u00e8 podran participar en els lots de Gastronomia Sostenible i apareixeran a tots els mitjans d&#8217;aquest projecte, tant a web com a xarxes socials.<\/p>\n<p>Actualment, Gastronomia Sostenible t\u00e9<strong>\u00a0300 subscriptors<\/strong>\u00a0que reben cada mes una senalla o lot amb productes d&#8217;alta qualitat. Els germans Roca preparen un men\u00fa per cuinarlos a casa, amb receptes pas a pas.<\/p>\n<p>El termini per apuntar-se als nous premis comen\u00e7a dia 7 d&#8217;octubre i acaba dia 7 de novembre. L&#8217;anguila\u00a0<em>shirayaki\u00a0<\/em>d&#8217;<strong>Angules Roset<\/strong>\u00a0(Tarragona) ser\u00e0 la protagonista de la recepta proposada pel xef catal\u00e0. Per acompanyar-la, Joan Roca proposa una salsa d&#8217;all negre produ\u00eft per\u00a0<strong>Quero Tango\u00a0<\/strong>(Toledo), i una salsa d&#8217;all blanc de\u00a0<strong>Chinch\u00f3n\u00a0<\/strong>(Madrid), en aquest cas de Pregonero. Per completar la recepta, el lot cont\u00e9 la recepta ametlles crues lleidatanes de<strong>\u00a0Fruits Secs Sendros<\/strong>\u00a0i\u00a0<strong>vinagre de Xer\u00e8s<\/strong>\u00a0DOP Vinagre de Jerez.<\/p>\n<p>D&#8217;altra banda, els germans Roca han volgut promocionar la carabassa com a producte del mes d&#8217;octubre. Jordi Roca, reboster d&#8217;El Celler de Can Roca, convida als subscriptors de la cistella a cuinar una recepta de pa de pessic de safr\u00e0 amb cabell d&#8217;\u00e0ngel de carbassa i taronja. Per elaborar-la, l&#8217;enviament d&#8217;aquest mes cont\u00e9 una carbassa de la Coromina (Girona), pipes de carbassa de l&#8217;empresa madrilenya<strong>\u00a0Los Anzi&#8217;s<\/strong>, mandarines valencianes de\u00a0<strong>Todol\u00ed Citrus Fundaci\u00f3<\/strong>, safr\u00e0 toled\u00e0 de\u00a0<strong>Velador\u00a0<\/strong>i agar agar de l&#8217;empresa corunyesa de<strong>\u00a0Porto Mui\u00f1os<\/strong>. La cistella tamb\u00e9 inclou un vi seleccionat per Josep Roca, sommelier del Celler de Can Roca.
