Com el nom indica, \u00e9s un vi ranci el qual ha desaparegut de gaireb\u00e9 la cuina actual i fins i tot, de molts de rebosts.<\/p>\n<p><strong>Pere i Bernat Calafat<\/strong>, propietaris del celler Jaume de Puntir\u00f3, expliquen que el vi ranci s\u2019utilitzava b\u00e0sicament per cuinar, per donar un toc peculiar a plats guisats a foc lent, com un darrer toc especiat que confitava els plats arrelats a la terra, els plats de greixonera amb una cocci\u00f3 lenta, amb flames insinuades. &#8220;Les padrines mallorquines i catalanes, sempre tenien al seu rebost una botella de vi ranci per usar als plats d\u2019ocasions especials, de celebracions, de festa. No hi mancava a cap casa. Amb el pas inexorable dels anys aquesta ancestral costum es va perdre&#8221;.<\/p>\n<p>La tend\u00e8ncia dels darrers anys \u00e9s\u00a0<strong>recuperar aquest tipus de vi<\/strong>, com b\u00e9 demostren els cellers del Priorat i de la Terra Alta, d&#8217;on no havien desaparegut ja que en mantenien el consum per a familiars i amistats m\u00e9s preuades.<\/p>\n<p><strong>Ideal com a aperitiu<\/strong><\/p>\n<p>Com a celler arrelat a la terra i a la pagesia mallorquina, Jaume de Puntir\u00f3 ha apostat per recuperar la tradici\u00f3 d\u2019elaborar el vi ranci, tamb\u00e9 dit vi sec. Ara per al consum com a aperitiu, com acompanyant de picades selectes.<\/p>\n<p><strong>Aromes profundes i ancestrals<\/strong><\/p>\n<p>Pere Calafat explica que Ranci de Puntir\u00f3 est\u00e0 elaborat amb la varietat aut\u00f2ctona\u00a0<strong>Gir\u00f3 Ros<\/strong>. &#8220;L\u2019hem tingut tres anys en barrals de vidre al terrat de casa, a sol i serena, de manera que ha evolucionat directament a l&#8217;exterior, patint i resistint les assolellades de l&#8217;estiu, el fred intens i les pluges a l&#8217;hivern, el bon temps de les primaveres, les variacions de temperatura del dia a la nit. \u00c9s un vi resilient, que s\u2019ha transformat, que s\u2019ha oxidat i t\u00e9 una coloraci\u00f3 d\u2019or vell, unes aromes profundes i ancestrals, i uns gustos complexos i subtils. Un vi que s\u2019ha d&#8217;observar, s\u2019ha d\u2019olorar i degustar amb concentraci\u00f3, a glops petits conscients i somiadors.
