Es tracta del llibre &#8216;Els millors plats de la cuina popular de Mallorca&#8217;, de na Maria Ant\u00f2nia Sureda i en Pere Muntaner de <a title=\"Bojos per la Cuina\" href=\"http:\/\/www.bojosperlacuina.com\" target=\"_blank\" rel=\"noopener\">Bojos per la Cuina<\/a>, i de n&#8217;Antoni Tugores, expert gastron\u00f2mic.<\/em><\/p>\n<figure style=\"width: 250px\" class=\"wp-caption alignright\"><img decoding=\"async\" style=\"margin: 8px;\" title=\"Bojos per la Cuina\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2013\/04\/Boj\/Bojos-per-la-Cuina.jpg\" alt=\"\" width=\"250\" height=\"167\" \/><figcaption class=\"wp-caption-text\">Maria A. Sureda i Pere Muntaner, autors del llibre, juntament amb Antoni Tugores.<\/figcaption><\/figure>\n<p style=\"text-align: justify;\"><strong>A part d&#8217;unes fotos precioses, qu\u00e8 trobarem en aquest llibre?<\/strong><br \/>\nUna selecci\u00f3 de les 112 receptes m\u00e9s representatives de la cuina mallorquina, explicades fil per randa perqu\u00e8 qualsevol persona que es proposi preparar-ne una se&#8217;n surti amb \u00e8xit. Hi concretam tant les quantitats exactes d&#8217;ingredients com els temps aproximats de cocci\u00f3; el nivell de dificultat; el preu (alt, mitj\u00e0 o baix) i fins i tot les calories. Tamb\u00e9 aportam en molts casos idees per fer variacions d&#8217;un mateix plat. A vegades, per simplificar-ne l&#8217;elaboraci\u00f3;<\/p>\n<p style=\"text-align: justify;\">altres vegades per completar-lo  o  alleugerir-lo. Cada recepta, a m\u00e9s, va precedida d&#8217;una breu introducci\u00f3 de caire hist\u00f2ric o etnol\u00f2gic que aporta dades interessants sobre el plat i que \u00e9s \u00fatil per &#8220;ambientar-se&#8221; abans de posar-se el davantal.<\/p>\n<p style=\"text-align: justify;\"><strong> Com valorau fer un llibre conjuntament amb n&#8217;Antoni Tugores?<\/strong><br \/>\nEns va fer molta il\u00b7lusi\u00f3 tenir l&#8217;oportunitat de treballar amb ell, perqu\u00e8 \u00e9s un reconegut expert en cuina mallorquina i admiram la seva feina d&#8217;investigaci\u00f3 en aquest i en altres camps. El projecte va n\u00e9ixer amb dos objectius molt clars: divulgar la nostra cuina, tan rica i variada, i fer factibles i f\u00e0cils les receptes per a qualsevol persona, encara que no tengui experi\u00e8ncia davant els fogons. I tot aix\u00f2 pensant molt especialment en la gent jove, que de cada cop s&#8217;interessa m\u00e9s per la cuina i per la nostra en particular. La nostra cuina \u00e9s riqu\u00edssima i, a m\u00e9s, exportable.<\/p>\n<blockquote><p>M.A. SUREDA: &#8220;HI CONCRETAM LES QUANTITATS EXACTES, LA DIFICULTAT&#8230; I FINS I TOT LES CALORIES&#8221;<\/p><\/blockquote>\n<p style=\"text-align: justify;\"><strong> D&#8217;on ve la teva passi\u00f3 per la cuina, Maria Ant\u00f2nia?<\/strong><br \/>\nDe ben petita ja m&#8217;agradava veure tot el proc\u00e9s de transformaci\u00f3 dels aliments. Primer nom\u00e9s mirava i feia quatre cosetes. Em fascinava tot all\u00f2. La padrina era molt bona cuinera i ma mare, encara millor que la padrina. He tengut bones mestres. De ma mare ho he apr\u00e8s quasi tot. Encara ara, als seus 85 anys, mant\u00e9 la mateixa passi\u00f3 per la cuina que ha tengut sempre. Quan vaig tenir deu o dotze anys ja em varen comen\u00e7ar a deixar preparar algun plat per al dinar familiar. Vaig comen\u00e7ar amb dol\u00e7os i llavors vaig anar aprenent altres plats. D&#8217;aleshores en\u00e7\u00e0 no he parat de recollir receptes familiars i de persones amb qui compartesc aquesta curolla.<\/p>\n<p style=\"text-align: justify;\"><strong>Pere, en qu\u00e8 t&#8217;inspires per fer les fotos? <\/strong><br \/>\nNo m&#8217;inspir en res en particular, per\u00f2 s\u00ed que, d&#8217;en\u00e7\u00e0 que v\u00e0rem comen\u00e7ar amb el blog, faig molta feina sense adonar-me&#8217;n. Navego moltes hores mirant fotos; quan hi ha revistes em fixo especialment en les fotografies gastron\u00f2miques; consulto llibres especialitzats&#8230; Crec que cada dia en vaig aprenent i de cada vegada tenc m\u00e9s clar com m&#8217;agraden les fotos i com no.<\/p>\n<blockquote><p>P. MUNTANER: &#8220;MOSTRAM EL RESULTAT EXACTE DE LES RECEPTES, SENSE TRAMPES&#8221;<\/p><\/blockquote>\n<p style=\"text-align: justify;\">Fer jo mateix les fotografies per al llibre ens ha perm\u00e8s plasmar-hi el resultat exacte de les receptes, sense trampes, tal com surten seguint les instruccions que hi oferim. \u00c9s important, abans de posar-se el davantal per comen\u00e7ar a cuinar un plat, saber quin aspecte hauria de tenir el resultat final.<\/p>\n<p style=\"text-align: justify;\"><strong>Dediques molt de temps a fer fotos?<\/strong><br \/>\nDep\u00e8n molt de cada plat. A vegades veus la fotografia r\u00e0pidament, i altres et torbes una mica m\u00e9s. Aix\u00f2 s\u00ed, n&#8217;hi ha que has de pensar-les abans, perqu\u00e8 hi ha plats que no esperen.  M&#8217;agrada fer diferents fotografies de cada plat, perqu\u00e8 aix\u00f2 em permet despr\u00e9s seleccionar m\u00e9s tard amb tranquilitat les que em semblen millors de la s\u00e8rie.<\/p>\n<p style=\"text-align: justify;\"><strong>Quan el trobarem a les llibreries?<\/strong><br \/>\nEl llibre ja \u00e9s a Palma (Embat, Born de llibres, Quart Creixent, Lluna&#8230;), Barcelona i Val\u00e8ncia. Tamb\u00e9 a Manacor i a altres pobles de Mallorca. N&#8217;hem fet la presentaci\u00f3 a Manacor i a Porreres.
