La capital acollir\u00e0 dos cert\u00e0mens, el\u00a0<strong>Concurs Estatal de Pinxos i Tapes Ciutat de Valladolid<\/strong>, que celebra la 18a edici\u00f3, i el Campionat Mundial de Tapes Ciutat de Valladolid, que arriba a la 6a edici\u00f3. Dos cuiners d&#8217;excepci\u00f3 Francis Paniego i Leonor Espinosa, presideixen el jurat de tots concursos.<\/p>\n<p>Entre els<strong>\u00a046 finalistes<\/strong>\u00a0del concurs estatal, hi ha seleccionats\u00a0<strong>tres restaurants de Mallorca<\/strong>. Els cuiners\u00a0 que els representen s\u00f3n els seg\u00fcents:<\/p>\n<ul>\n<li><strong>Andreu Moreno Castellano<\/strong>,\u00a0del restaurant Sa Punta (Cala Bona, Son Servera), amb la tapa La Ruta de les Esp\u00e8cies.<\/li>\n<li><strong>Ant\u00f2nia Massanet Perell\u00f3<\/strong>, del restaurant Ses Cases de Fetget (Son Servera) amb la tapa\u00a0Souvenir Mediterrani.<\/li>\n<li><strong>Igor Rodr\u00edguez Sanz<\/strong>, del restaurant El Bandarra (Palma), amb Mari Flor.<\/li>\n<\/ul>\n<p>Les tapes finalistes\u00a0<strong>es podran degustar del 8 al 13 de novembre als bars i restaurants val\u00b7lisoletans<\/strong>\u00a0durant el Festival Internacional de Tapes de Valladolid, un dels principals esdeveniments gastron\u00f2mics per la seva capacitat de convocat\u00f2ria i, tamb\u00e9, per la participaci\u00f3 professional i popular que demostra tenir.<\/p>\n<p><strong>Igor Rodr\u00edguez<\/strong><\/p>\n<p>El xef Igor Rodr\u00edguez,\u00a0<strong>president del jurat de TaPalma<\/strong>, s&#8217;hi presenta amb un pinxo que ret homenatge a la terra de la seva fam\u00edlia paterna, C\u00e0ceres, amb un toc mallorqu\u00ed. Es tracta de\u00a0<strong>Mari Flor, basada en una recepta que feia amb la seva tia Milagros<\/strong>, germana de son pare, Jose Mari, amb sa mare, Maria Jes\u00fas, a Hu\u00e9laga, un poble de nom\u00e9s 200 habitants a la falda de la Serra de Gata (Espanya). D&#8217;una senzillesa aparent, l&#8217;equilibri de la farina, ou, sal, an\u00eds i mel \u00e9s vital per donar forma a aquesta recepta original amb forma de flor. El farciment est\u00e0 fet a base de pica-pica de s\u00edpia, confitura \u00e0cida de llimona de S\u00f3ller i maonesa de menta.<\/p>\n<p>Des del 2009, el cuiner basc i mallorqu\u00ed d&#8217;adopci\u00f3 Igor Rodr\u00edguez participa en el campionat estatal i ha estat proclamat en dues ocasions com a subcampi\u00f3 d&#8217;Espanya (2013 i 2021) i una vegada campi\u00f3 (2017). El 2014 i el 2018 va participar en el Campionat Mundial i el 2020 no va participar perqu\u00e8 va formar part del jurat del concurs estatal.<\/p>\n<p><strong>Andreu Moreno<\/strong><\/p>\n<p>El cuiner mallorqu\u00ed Andreu Moreno va guanyar el p<strong>remi de Millor Tapa Tradicional l&#8217;any 2018<\/strong>\u00a0i el tercer premi a l&#8217;edici\u00f3 estatal de l&#8217;any 2019.\u00a0\u00a0El nom que ha triat per a la tapa de l&#8217;edici\u00f3 2022 \u00e9s La Ruta de les Esp\u00e8cies. Consisteix en un plat vegetari\u00e0 que tamb\u00e9 \u00e9s apte per a cel\u00edacs, fet amb carabassa, moniato, nap i el preparat veg\u00e0 Heura, tot especiat amb clau, canyella, pebres i curris.<\/p>\n<p><strong>Ant\u00f2nia Massanet<\/strong><\/p>\n<p>La cuinera mallorquina Ant\u00f2nia Massanet forma part de l&#8217;equip de cuina de Ses Cases de Fetget i ha presentat per a l&#8217;edici\u00f3 d&#8217;enguany una postal comestible de la Calobra. Aquest\u00a0<strong>miratge\u00a0<\/strong>(<em>trampantojo<\/em>) \u00e9s\u00a0<strong>galleta salada especiada amb paper de gamba y suquet de gamba vermella de S\u00f3ller<\/strong>. Massanet ha participat en dues edicions anteriors del concurs, concretament en l&#8217;\u00e0mbit estatal. La primera va ser el 2020, amb Andreu Moreno, i la tapa que hi va presentar va consistir en una cresta japonesa (<em>gyoza<\/em>) d&#8217;aguiat de s\u00edpia, servida en una barqueta de s\u00edpia, un homenatge als seus dos avis.
