{"id":78615,"date":"2022-10-03T05:13:46","date_gmt":"2022-10-03T03:13:46","guid":{"rendered":"https:\/\/gastronomicament.cat\/?p=78615"},"modified":"2022-10-03T05:13:46","modified_gmt":"2022-10-03T03:13:46","slug":"guillem-mendez-can-ripoll-i-gerard-tetart-premis-gastronomics-de-mallorca-2021","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/ca\/guillem-mendez-can-ripoll-i-gerard-tetart-premis-gastronomics-de-mallorca-2021","title":{"rendered":"Guillem M\u00e9ndez, Can Ripoll i G\u00e9rard T\u00e9tart, Premis Gastron\u00f2mics de Mallorca 2021"},"content":{"rendered":"<p>L&#8217;Associaci\u00f3 de Periodistes i Escriptors Gastron\u00f2mics de les Illes Balears (APEGIB) ha lliurat aquest dissabte els Premis Gastron\u00f2mics de Mallorca, en el marc de la Fira d&#8217;Alc\u00fadia i amb el suport de l&#8217;Ajuntament d&#8217;Alc\u00fadia.<\/p>\n<p>El Premi Cr\u00edtica Gastron\u00f2mica 2021 ha estat per a\u00a0 Guillem M\u00e9ndez del restaurant El Olivo (Dei\u00e0), de qui s&#8217;ha destacat la seva cuina\u00a0 honesta, amb el producte de Mallorca per bandera, tot i que tamb\u00e9 ha usat els aliments de fora que destaquen per ser excel\u00b7lents, un cuiner que sempre \u00e9s atent a les noves t\u00e8cniques de cocci\u00f3 i elaboracions, amb un estil cl\u00e0ssic i elegant fan que sigui un dels cuiners de refer\u00e8ncia de l&#8217;illa.<\/p>\n<p>APEGIB tamb\u00e9 ha guardonat el Celler Can Ripoll d&#8217;Inca amb el\u00a0Premi Caty Juan de Corral 2021 que la fam\u00edlia Gual regenta des de fa m\u00e9s de mig segle, una fonda on hi trobam alguns dels plats m\u00e9s representatius de la cuina tradicional de Mallorca.<\/p>\n<p>Finalment, l&#8217;associaci\u00f3 ha volgut fer un reconeixement especial al cuiner\u00a0Gerard Tetart per la seva traject\u00f2ria, que el 1974 va agafar\u00a0 el comandament del restaurant Ses Rotges de Cala Rajada, amb el qual tres anys m\u00e9s tard li van atorgar la primera estrella Michelin de Mallorca.<\/p>\n<p>Els membres d&#8217;APEGIB que hi han estat presents s\u00f3n Bep Al\u00b7l\u00e8s, Lola Olmo, Margalida Socias i Josep Maria Natta.<\/p>\n<p>A continuaci\u00f3 teniu m\u00e9s informaci\u00f3 dels premiats:<\/p>\n<h4><strong>Premi Cr\u00edtica Gastron\u00f2mica 2021. <\/strong><strong>Guillem M\u00e9ndez del restaurant El Olivo (Dei\u00e0)<\/strong><\/h4>\n<p>Hi ha persones que estan destinades a una professi\u00f3, a un ofici. Quan tenia dotze anys, Guillem M\u00e9ndez (S\u00f3ller, 1968) volia ser cuiner perqu\u00e8 sa mare, Maria, ho era, al restaurant del seu oncle, el Mirador de ses Barques. Ella, que en Pau descansi, va intentar que el seu fill no es dedic\u00e0s als fogons i, amb aquesta finalitat, el va posar durant tres mesos d&#8217;estiu a escurar al restaurant Las Olas, de Joan Vicens. Ella es pensava que Guillem voldria anar a la platja amb els amics i que avorriria\u00a0la idea de ser cuiner i, aix\u00ed, continuaria estudiant i faria una carrera universit\u00e0ria. Tot i els esfor\u00e7os, el tir li va sortir per la culata perqu\u00e8 Guillem M\u00e9ndez va acabar estudiant el grau d&#8217;hosteleria de cuina a l&#8217;IES Jun\u00edper Serra amb Mestre Tomeu Esteva i Antoni Pinya i des de fa 21 anys \u00e9s el cap de cuina d&#8217;El Olivo i del hotel La Resid\u00e8ncia de Dei\u00e0, on treballa des de fa poc m\u00e9s de tres d\u00e8cades.<\/p>\n<p>A part d&#8217;aquestes dues grans figures, Tomeu Esteva i Antoni Pinya, hi ha hagut altres mestres que l&#8217;han influenciat, a m\u00e9s de Joan Vicens, que\u00a0va morir ara fa quasi dos anys, hi ha Josef Sauerschell d&#8217;Es Rac\u00f3 des Teix (amb qui Guillem va comen\u00e7ar a fer feina a El Olivo i amb qui va comen\u00e7ar a tocar la\u00a0nouvelle cuisine\u00a0i va con\u00e8ixer la cuina centroeuropea), el franc\u00e8s Raymond Blanc, amb qui va coincidir a Oxford, com tamb\u00e9 altres cuiners de Belmond a It\u00e0lia, al Carib i a M\u00e8xic. La seva cuina ha evolucionat segons la demanda que han tengut\u00a0al mercat, per\u00f2 sempre ha estat honesta, amb el producte de Mallorca per bandera, tot i que tamb\u00e9 ha usat els aliments de fora que destaquen per ser excel\u00b7lents. Sempre atent a les noves t\u00e8cniques de cocci\u00f3 i elaboracions, el seu estil cl\u00e0ssic i elegant fan que sigui un dels cuiners de refer\u00e8ncia. Enhorabona, Guillem!<\/p>\n<h4><strong>Premi Caty Juan de Corral 2021. Celler Can Ripoll<\/strong><\/h4>\n<p>Can Ripoll \u00e9s un dels cellers m\u00e9s antics que romanen a Inca, i segurament a Mallorca. Situat en un edifici senyorial, va comen\u00e7ar la seva hist\u00f2ria l\u2019any 1768 com a celler de vi, on hi anaven els obrers d\u2019Inca a fer un tassonet o a omplir les seves gerres.<\/p>\n<p>Encara avui dia conserva les grans botes congrenyades de fusta i els estris de llaut\u00f3 que decoren les seves parets donen fe d\u2019aquests origens. A partir de 1940, a Can Ripoll es va comen\u00e7ar a servir tamb\u00e9 menjar. El negoci va passar per diverses mans fins que, l\u2019any 1969, en Joan Gual i la seva dona, Catalina Gomila, varen agafar les rendes del celler. I sota la direcci\u00f3 de la fam\u00edlia Gual, Can Ripoll va fer-se un nom a tota la comarca, per la seva especialitat en cuina mallorquina, que tamb\u00e9 combinen amb elaboracions m\u00e9s modernes. \u201cCuina local i sempre de temporada\u201d, explica la seva fundadora, Catalina, que avui ens acompanya juntament amb la seva filla Ant\u00f2nia. Tenen clients que fa d\u00e8cades que gaudeixen de les seva porcella, les sopes mallorquines, el llom amb col, el tumbet, les carxofes farcides de bacall\u00e0 o arrebossades, llampuga amb pebres\u2026 i tamb\u00e9 de les paelles.<\/p>\n<p>Actualment duen el negoci els tres fills dels fundadors, els germans Joan Miquel, Biel i Ant\u00f2nia Gual, i ja se pot dir que despr\u00e9s de 53 anys de bona feina de la fam\u00edlia Gual, hi haur\u00e0 tercera generaci\u00f3, at\u00e8s que el n\u00e9t dels fundadors, tamb\u00e9 de nom Joan Gual com el padr\u00ed, ja hi fa feina a la cuina. Segur que encara en podrem gaudir per molts d\u2019anys m\u00e9s de les seva cuina mallorquina de temporada i amb producte local.<\/p>\n<p>Per tota aquesta traject\u00f2ria, l\u2019Associaci\u00f3 de Periodistes i Escriptors Gastron\u00f2mics de les Illes Balears ha decidit entregar el Premi Caty Juan de Corral al Celler Can Ripoll d\u2019Inca.<\/p>\n<p>Recullen el premi Catalina Gomila i Ant\u00f2nia Gual<\/p>\n<h4><strong>Reconeixement traject\u00f2ria. Gerard Tetart<\/strong><\/h4>\n<p>Que avui lliurem aquest premi a G\u00e9rard T\u00e9tard \u00e9s fruit d&#8217;un c\u00famul de casualitats. \u00c9s el segon d&#8217;una fam\u00edlia de 12 germans, i va ser l&#8217;\u00fanic que, alguna vegada, va aixecar la tapa de les olles del que es cuinava als fogons de ca seva. Aix\u00ed que els seus pares varen decidir enviar-lo a estudiar cuina. Les pr\u00e0ctiques les va fer a la pastisseria alsaciana d&#8217;un oncle mallorqu\u00ed. M\u00e9s tard, va acompanyar-lo a Cala Rajada per treballar a l&#8217;hotel d&#8217;uns coneguts. Aquest hotel era Ses Rotges. Un establiment que, un cop finalitzat el contracte, es va convertir en possibilitat de comprar el trasp\u00e0s. Era l&#8217;any 1974 i G\u00e9rard gaireb\u00e9 no parlava castell\u00e0 i gens de catal\u00e0. El dia de la firma, li van lliurar les claus i li van indicar com arribar a Manacor, on hi havia el mercat on comprar els productes.<\/p>\n<p>Tres anys m\u00e9s tard, el 1977, li van atorgar la primera estrella Michelin de Mallorca. A l&#8217;any seg\u00fcent, va arribar Laurence, la que seria la seva esposa. Al seg\u00fcent, els infants. Despr\u00e9s de 12 a 24 habitacions. Amb una mitjana de 80 comensals per vespre, tenien molt clar que l&#8217;important era que el client fos feli\u00e7. La seva cuina \u00e9s una cuina honesta, sense artificis, amb l&#8217;ingredient com a centre del plat. El seu treball, el d&#8217;una persona \u00edntegra i amb el car\u00e0cter del treballador incansable que ara gaudeix d&#8217;una jubilaci\u00f3 m\u00e9s que merescuda!
