Receptes familiars i dels millors fogons\u00a0<\/em>(Rosa dels Vents,\u00a0\u00a0Penguin 2022)<em>,\u00a0<\/em>Ada Parellada\u00a0hi recull 54 receptes molt senzilles per fer a casa.<\/p>\n<p><strong>Tenim l&#8217;agenda plena, sense temps per cuinar&#8230;<\/strong><\/p>\n<p>I tant, i la ind\u00fastria aliment\u00e0ria \u00e9s molt llesta perqu\u00e8 ens facilita la vida, per\u00f2 en canvi ens fa tornar beneits i dependents dels seus productes, fins al punt de ser inh\u00e0bils per fer plats tan senzills com ara una sopa.<\/p>\n<p><strong>Tan f\u00e0cil de fer \u00e9s?<\/strong><\/p>\n<p>Ja ho crec! \u00c9s cert que la sopa triga a fer-se, per\u00f2 t&#8217;ocupen poc temps perqu\u00e8 en realitat ho poses tot dins l&#8217;olla i, mentre es fa, et pots posar a veure una s\u00e8rie.<\/p>\n<p><strong>Per\u00f2 els supermercats s\u00f3n plens de pretatgeries de brous i cremes de tetrabric.<\/strong><\/p>\n<p>Tenim el risc de deixar de ser l&#8217;Homo Sapiens per retrocedir i ser l&#8217;Homo Erectus. La primera ra\u00f3 per la qual compram productes\u00a0\u00a0no \u00e9s el preu ni la salut \u00e9s la comoditat. Per aix\u00f2, hem d&#8217;estar lluitant contra aquest pecat capital que \u00e9s la mandra. Aquests brous de tetrabric\u00a0s\u00f3n sans, per\u00f2 s\u00f3n insostenibles econ\u00f2micament i mediambientalment i, a m\u00e9s, si no sabem que amb unes verdures que tenim a la gelera podem fer un brou, tornam in\u00fatils i febles i perdem la nostra cultura culin\u00e0ria. Una altra mostra d&#8217;aquest sense sentit s\u00f3n els ous ferrats precuinats que ven una cadena de supermercats.<\/p>\n<p>Fer una sopa \u00e9s ben f\u00e0cil, sostenible, c\u00f2mode, confortable&#8230; per aix\u00f2 ha perviscut al llarg de la hist\u00f2ria, i \u00e9s molt bona de pair. A m\u00e9s, nom\u00e9s cal usar una olla, no embrutes amb esquitxos, et permet ser creatiu, i feta una, feta totes. A m\u00e9s, per molt que vulguem ser els propietaris de l&#8217;escudella, la sopa \u00e9s arreu del m\u00f3n, des d&#8217;It\u00e0lia, a Portugal, al Jap\u00f3&#8230; i per aix\u00f2, tamb\u00e9 ens agermana.<\/p>\n<p><strong>A m\u00e9s, un brou casol\u00e0 \u00e9s bo de conservar?<\/strong><\/p>\n<p>S\u00ed, el pots congelar o fer-lo al buit (tapat en calent i cap per avall). Ara b\u00e9, al llibre no m&#8217;hi he centrat perqu\u00e8 quan l&#8217;escrivia pensava a adre\u00e7ar-me a una persona urbana, que li costa molt encendre els fogons perqu\u00e8 t\u00e9 moltes coses a l&#8217;abast: botigues, supermercats oberts a moltes hores, que abandona la cuina i t\u00e9 poc espai per conservar.<\/p>\n<p><strong>\u00c9s un llibre molt ben explicat, que engresca a cuinar, i en qu\u00e8 has comptat amb col\u00b7laboradors.\u00a0<\/strong><\/p>\n<p>Hi han participat 25 persones que cuinen regularment o que la cuina \u00e9s la seva d\u00e8ria. Vaig pensar que aix\u00ed seria molt m\u00e9s entretingut si hi participava m\u00e9s gent i, alhora, enriquiria molt m\u00e9s l&#8217;obra i el lector.<\/p>\n<p><strong>Entre aquestes persones hi ha la mallorquina Cati Pons.<\/strong><\/p>\n<p>Fa molt que la conec. Fa molts anys va contactar amb mi perqu\u00e8 fes uns cursos de cuina a Bunyola. \u00c9s una persona molt generosa i extrovertida, i com que \u00e9s una apassionada de la cuina i estima tant Mallorca, li ho vaig proposar i ens ha cedit una recepta de llenties marineres, que ben segur que us agradar\u00e0.<\/p>\n<p><strong>El primer llibre de la col\u00b7lecci\u00f3 el va fer el teu germ\u00e0. N&#8217;hi haur\u00e0 m\u00e9s?<\/strong><\/p>\n<p>S\u00ed, en Ramon\u00a0es va centrar en les picades, que s\u00f3n tot un m\u00f3n fascinant. La idea \u00e9s continuar la col\u00b7lecci\u00f3 de monogr\u00e0fics.
