Durant la fermentaci\u00f3, els enzims produ\u00efts pel fong descomponen els carbohidrats i prote\u00efnes de la soia, i es converteixen en compostos m\u00e9s digeribles i nutritius.<\/p>\n<p>El gust que t\u00e9 <strong>\u00e9s terr\u00f3s i lleugerament salat<\/strong>, i se sol comparar al de la nou. Tamb\u00e9 es considera un sabor neutral, per la qual cosa resulta molt vers\u00e0til a l&#8217;hora d&#8217;usar-se a la cuina, i per aix\u00f2 s&#8217;inclou en nombroses receptes, siguin dins de guisats, amanides o fritades.<\/p>\n<p>Com que t\u00e9 19 grams de prote\u00efnes per cada 100 grams de l&#8217;aliment, \u00e9s considera un<strong>\u00a0producte alimentari altament proteic<\/strong>.
