Del 19 de maig al 18 de juny s&#8217;intal\u00b7lar\u00e0 a l&#8217;exclusiu\u00a0<strong>Cap Vermell Grand Hotel<\/strong>, de\u00a0<strong>Canyamel<\/strong>,<strong>\u00a0<\/strong>on formar\u00e0 part de l&#8217;excel\u00b7lent oferta gastron\u00f2mica de l&#8217;hotel, com ara Voro, amb dues estrelles Michelin<\/p>\n<p>El restaurant The Crossing \u00e9s conegut per la cuina d&#8217;alt nivell. El men\u00fa reflecteix sabors, influ\u00e8ncies i receptes de tot l&#8217;\u00cdndia, des dels cl\u00e0ssics tradicionals fins a les receptes m\u00e9s modernes.<\/p>\n<p>Joshi gaudeix d&#8217;un gran reconeixement al m\u00f3n gastron\u00f2mic i ha treballat durant m\u00e9s de 23 anys a 8 pa\u00efsos diferents. Avui dia, <strong>\u00e9s un dels xefs m\u00e9s vers\u00e0tils de l&#8217;\u00cdndia<\/strong>. La seva cuina es basa a\u00a0<strong>reviure cl\u00e0ssics regionals i receptes heretades<\/strong>, que han passat de generaci\u00f3 en generaci\u00f3,<strong>\u00a0als quals aporta un toc cosmopolita i avantguardista<\/strong>.<\/p>\n<p>Per al xef, <strong>la seva cuina<\/strong>\u00a0\u201c<strong>\u00e9s una travessa de sabors, una cru\u00eflla, no pas una fusi\u00f3<\/strong>, ja que el concepte de The Crossing\u00a0\u00a0\u00e9s una connexi\u00f3 entre la varietat cultural i culin\u00e0ria de l&#8217;\u00cdndia, a la qual tamb\u00e9 han influ\u00eft estats com ara Gran Bretanya o Portugal\u201d.<\/p>\n<p>Al restaurant The Crossing\u00a0<strong>s&#8217;hi usar\u00e0 el producte local i mediterrani<\/strong>, de manera que el comensal podr\u00e0 gaudir-lo com si l&#8217;aliment viatj\u00e0s a l&#8217;\u00cdndia i torn\u00e0s amb les esp\u00e8cies a la maleta.<\/p>\n<p>Aix\u00ed, la proposta de The Crossing inclou un<strong>\u00a0<em>chaat\u00a0<\/em>de tom\u00e0tiga de ramellet inspirat en un plat local de la hist\u00f2rica ciutat de Benar\u00e9s<\/strong>, al nord de l&#8217;\u00cdndia. Tamb\u00e9 hi juguen un paper important els\u00a0<em>gunpowder<\/em>, que utilitzen els gambots vermells, plens de sabor i que fan honor a una esp\u00e8cie del sud de l&#8217;\u00cdndia.<\/p>\n<p>Seguint la filosofia de barreja intercultural de sabors, Jitin Joshi i el seu equip utilitzen els pebres del Padr\u00f3 torrats i servits amb un formatge suau de cardamom i oli de xile <em>naga\u00a0<\/em>coent. A m\u00e9s, els\u00a0<strong>musclos blaus es cuinen suaument en un brou de tamarinde i coco<\/strong>\u00a0i, per \u00faltim, cal destacar el cl\u00e0ssic\u00a0<strong>pollastre de mantega\u00a0<\/strong>del men\u00fa de The Crossing.<\/p>\n<p>Cal destacar que &#8216;The Crossing&#8217; va obrir les portes el 20 de gener de 2022 a Dubai, Uni\u00f3 dels Emirats \u00c0rabs.
