Es tracta del xef\u00a0<strong>Saverio Sbaragli<\/strong>, cap de cuina del restaurant francoitali\u00e0\u00a0<strong>Al Muntaha\u00a0<\/strong>de l&#8217;hotel Burj Al Arab Jumeirah, restaurant de Dubai guardonat amb una estrella Michelin.<\/p>\n<p>La cita va tenir lloc el 27 de setembre\u00a0i hi col\u00b7labor\u00e0 activament el cuiner\u00a0<strong>Javier L\u00f3pez<\/strong>, responsable dels fogons d&#8217;Es Fanals i de Jumeirah Port Soller Hotel &amp; Spa. Tots dos varen preparar un men\u00fa degustaci\u00f3 de sis plats que combinaren\u00a0la\u00a0 cuina d&#8217;Al Muntaha amb ingredients \u00fanics i les tradicions culin\u00e0ries del\u00a0<strong>Port de S\u00f3ller<\/strong>.<\/p>\n<p>Alguns dels plats que s&#8217;elaboraren expressament foren el llobarro salvatge amb ny\u00e0mera, brou de pollastre i herbes, el carpaccio de gamba de S\u00f3ller amb caviar de Beluga, escuma de llimona, gelat de fonoll i cruixent d&#8217;arr\u00f2s amb alga nori, el bottini de mar i muntanya amb foie-gras, cranc reial i consom\u00e9 de bolets, i el cabrit de la Serra de Tramuntana, amb bunyol de patata de sa Pobla, escuma de tubercles i cruixent de blat. Els plats es varen maridar amb vins occitans del celler <strong>La Chablisienne<\/strong>\u00a0i de mallorquins com els dels cellers<strong>\u00a0Son Cresp\u00ed<\/strong>\u00a0i\u00a0<strong>Nacra<\/strong>.<\/p>\n<p><strong>Traject\u00f2ria de\u00a0Saverio Sbaragli<br \/>\n<\/strong>Saverio Sbaragli\u00a0 es va formar amb el prestigi\u00f3s cuiner\u00a0<strong>Alain Ducasse<\/strong>\u00a0i durant la seva carrera\u00a0ha obtingut diversos guardons, com ara l&#8217;estrella Michelin com a xef executiu del Four Seasons Hotel des Bergues de Ginebra, a m\u00e9s de treballar en el prestigi\u00f3s l&#8217;<strong>Arp\u00e8ge<\/strong>, amb tres estrelles Michelin, on va treballar a les ordres del xef\u00a0<strong>Alain Passard<\/strong>. Al restaurant Al Muntaha, Saverio continua essent reconegut per la seva excel\u00b7l\u00e8ncia gastron\u00f2mica, premiat amb una estrella Michelin durant dos anys consecutius amb la\u00a0<em>Guia Michelin\u00a0<\/em>de Dubai.
