Els vibrio s\u00f3n uns bacteris aqu\u00e0tics que es poden trobar als mariscs. Alguns ceps s\u00f3n pat\u00f2gens i\u00a0<strong>poden causar gastroenteritis o infeccions greus<\/strong>.<\/p>\n<p>En un informe anterior (CLEFSA), els experts de l&#8217;EFSA varen analitzar els possibles efectes que el canvi clim\u00e0tic podria tenir en una \u00e0mplia varietat de q\u00fcestions relacionades amb la seguretat aliment\u00e0ria, inclosos els bacteris de vibrio al marisc.<\/p>\n<p>Els bacteris vibri poden sobreviure i prosperar en diversos entorns aqu\u00e0tics a causa de diversos factors. Els m\u00e9s freq\u00fcents s\u00f3n:<\/p>\n<ul>\n<li><strong>Temperatura<\/strong>: els bacteris vibris creixen de manera \u00f2ptima en condicions c\u00e0lides. Les temperatures m\u00e9s altes n&#8217;afavoreixen la pres\u00e8ncia i el creixement.<\/li>\n<li><strong>Salinitat<\/strong>: els bacteris vibri requereixen una certa concentraci\u00f3 de sal per a un creixement \u00f2ptim. Per aix\u00f2, les aig\u00fces de baixa salinitat o salobres (on els rius desemboquen al mar) corren m\u00e9s risc.<\/li>\n<\/ul>\n<p>Des de l&#8217;EFSA adverteixen que la pres\u00e8ncia de resist\u00e8ncia als antimicrobians en bacteris detectats en marisc i pat\u00f2gens per als \u00e9ssers humans \u00e9s motiu de preocupaci\u00f3, a causa de la seva possible repercussi\u00f3 en la salut p\u00fablica.<\/p>\n<p>La darrera avaluaci\u00f3 de l&#8217;EFSA posa en relleu que es van detectar resist\u00e8ncia a diversos antimicrobians, inclosos els d&#8217;\u00faltim recurs, en estudis sobre ceps a\u00efllats de vibrio spp. trobades en marisc o procedents de ceps a\u00efllats de vibrio spp. que causen infeccions transmeses pels aliments a Europa. A causa de les limitades proves disponibles, els experts recomanen fer una enquesta per recopilar dades comparables.<\/p>\n<p><strong>Com podem prevenir i controlar la pres\u00e8ncia de vibrio en el marisc?<br \/>\n<\/strong>Per prevenir i controlar la pres\u00e8ncia de vibrio en el marisc, \u00e9s fonamental mantenir la cadena del fred durant la transformaci\u00f3, el transport i l&#8217;emmagatzematge, especialment en el cas del marisc destinat a ser consumit cru.<\/p>\n<p>Les possibles\u00a0<strong>mesures per reduir la pres\u00e8ncia de vibrio<\/strong>\u00a0s\u00f3n processament per alta pressi\u00f3, irradiaci\u00f3 i congelaci\u00f3 (r\u00e0pida) seguida de l&#8217;emmagatzematge en condicions de congelaci\u00f3 a llarg termini.
