A m\u00e9s , hi varen participar professionals de prestigi d&#8217;\u00e0mbit estatal i europeu, que varen compartir la seva experi\u00e8ncia i visi\u00f3 sobre temes clau per a l&#8217;activitat professional del sector.<\/p>\n<p><strong>Objectius assolits<br \/>\n<\/strong>Andreu Palou, president del consell regulador IGP Sobrassada de Mallorca, va destacar que \u201calguns dels objectius aconseguits enguany s\u00f3n l&#8217;<strong>ampliaci\u00f3 del jurat de tast<\/strong>, amb 20 nous tastadors acreditats, que s&#8217;han entrenat durant un any. Tamb\u00e9 va remarcar la import\u00e0ncia d&#8217;haver signat el\u00a0<strong>conveni amb l&#8217;ONCE<\/strong>\u00a0que visibilitza la sobrassada a totes les comunitats aut\u00f2nomes. D&#8217;altra banda, hem creat la\u00a0<strong>C\u00e0tedra Sobrassada de Mallorca IGP<\/strong>, amb la Universitat de les Illes Balears, que implica establir una eina poderosa per impulsar la col\u00b7laboraci\u00f3 entre el m\u00f3n cient\u00edfic, acad\u00e8mic i empresarial, que promogui la innovaci\u00f3, la transfer\u00e8ncia de coneixement , la formaci\u00f3 i el desenvolupament econ\u00f2mic i social\u201d.<\/p>\n<p>A m\u00e9s, Palou ha assenyalat que \u201cla sobrassada de Mallorca vol consolidar-se com a representant de les nostres tradicions, de la nostra cultura i del nostre territori, amb un estudi que, de manera preliminar, mostra la\u00a0<strong>llesca de pa amb sobrassada de Mallorca<\/strong>\u00a0com\u00a0<strong>un referent nutricional de la nostra gastronomia saludable<\/strong>\u201d.<\/p>\n<p><strong>Medalles d&#8217;Or 2024: Antoni Pinya i Sebasti\u00e0 Cruellas<br \/>\n<\/strong>Durant l&#8217;acte, tamb\u00e9 es varen lliurar les Medalles d&#8217;Or de 2024, que enguany s&#8217;han atorgat a Antoni Pinya Florit (cuiner) i Sebasti\u00e0 Cruellas Rossell\u00f3 (Embotits Obrador), per la seva gran tasca a l&#8217;engrandiment i coneixement de la Sobrassada de Mallorca.<\/p>\n<p><strong>Antoni Pinya<\/strong>, nascut a S\u00f3ller, ha dedicat la seva carrera a l&#8217;ensenyament de la cuina des de 1983. Ha fet feina a diverses institucions de Mallorca. Destaca per la seva implicaci\u00f3 desinteressada en la promoci\u00f3 de la Sobrassada de Mallorca IGP. Aix\u00ed, col\u00b7labora amb aquest consell regulador per reintroduir aquest producte tradicional a la cuina actual. Va publicar el primer receptari dedicat a la sobrassada a 1998 i va continuar amb cinc llibres m\u00e9s, dos dels quals van ser premiats, com ara\u00a0<em>La sobrassada a Mallorca cuina i cultura<\/em>, escrit amb Antoni Contreras. Tamb\u00e9 destaca el Gourmand World Cookbook Awards com a millor llibre del m\u00f3n de cuina mediterr\u00e0nia escrit en llengua castellana de l&#8217;any 2023, amb menci\u00f3 especial a la publicaci\u00f3\u00a0<em>Sobrasada de Mallorca: color y sabor<\/em>. Va dissenyar el ganivet per untar i tallar sobrassada i participa en activitats de divulgaci\u00f3,\u00a0<em>showcookings<\/em>\u00a0i va impartir classes magistrals i tasts arreu del m\u00f3n, per la qual cosa \u00e9s una figura cabdal en la promoci\u00f3 de la Sobrassada de Mallorca IGP.<\/p>\n<p><strong>Sebasti\u00e0 Cruellas<\/strong>\u00a0va comen\u00e7ar al sector carni abans d&#8217;assumir la direcci\u00f3 d&#8217;Embotits Obrador, Can Manxa, i es va involucrar fermament a la IGP Sobrassada de Mallorca d&#8217;en\u00e7\u00e0 1994. Com a vocal titular del consell regulador entre 2013 i 2022, va impulsar la Sobrassada de Mallorca de Porc Negre, per defensar les tradicions mallorquines i per promoure la participaci\u00f3 activa dels elaboradors. Sebasti\u00e0 Cruellas \u00e9s, avui dia, el tastador m\u00e9s antic en actiu del Panell de Tast. A m\u00e9s, va participar a les jornades primig\u00e8nies de recerca, fa m\u00e9s de 23 anys, per crear la primera fitxa de tast de Sobrassada de Mallorca que recoll\u00eds les peculiaritats del porc negre mallorqu\u00ed.
