{"id":10278,"date":"2014-02-20T15:03:49","date_gmt":"2014-02-20T14:03:49","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=10278"},"modified":"2022-04-07T11:17:35","modified_gmt":"2022-04-07T09:17:35","slug":"cors-de-foie-gras-i-maduixa","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/cors-de-foie-gras-i-maduixa","title":{"rendered":"Cors de foie gras i maduixa"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n<em>Per a 12 cors mitjans o 24 de petits<\/em><\/p>\n<ul>\n<li>3 llesques de pa de motlle (blanc, integral o llavors)<\/li>\n<\/ul>\n<p><em>Per la mousse de foie <\/em><\/p>\n<ul>\n<li><em><\/em>75-80 g de fetge fresc d\u2019\u00e0nec<\/li>\n<li>50 g de nata per a cuinar<\/li>\n<li>\u00bd fulla de gelatina<\/li>\n<li>Sal<\/li>\n<li>Pebre bo<\/li>\n<\/ul>\n<p><em>Per a la cobertura de melmelada<\/em><\/p>\n<ul>\n<li>125 g de melmelada de maduixa (o gerds o groselles)<\/li>\n<li>75 g d\u2019aigua<\/li>\n<li>2 g d\u2019agar-agar<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3<\/strong><br \/>\nComen\u00e7arem preparant la mousse de foie gras. Posarem la gelatina a remullar en aigua freda durant 4-5 minuts perqu\u00e8 s\u2019hidrati b\u00e9. Mentrestant, en un cass\u00f3 col\u00b7locarem la nata i el fetge tallat a trossos i el posarem a coure a temperatura mitja fins que el fetge s\u2019hagi fos completament. El salpebrarem i el tastarem. Ho apartarem del foc, hi afegirem la gelatina, ho barrejarem i colarem la mescla. Un cop colada, omplirem els motlles de silicona, donarem un parell de cops sobre el marbre de la cuina per a fer desapar\u00e8ixer possibles bombolles i posarem els motlles plens al congelador perqu\u00e8 s&#8217;endureixin r\u00e0pidament. Els deixarem congelar durant 1 hora com a m\u00ednim.<\/p>\n<p>Mentre els cors es congelen, prepararem les torradetes. Amb l\u2019ajuda d\u2019un corr\u00f3 (o aprimador) aplanarem les llesques de pa de motlle i amb l\u2019ajuda d\u2019un tallador de galetes farem les formes de cor. Les col\u00b7locarem en una palangana de forn i amb el grill enc\u00e8s nom\u00e9s es torbaran 4-5 minuts per coure&#8217;s per cada costat.<\/p>\n<p>Una vegada tenguem els cors congelats, els retirarem i els desemmotllarem. Els punxarem amb un escuradents per la part inferior i els tornarem a reservar dins un plat en el congelador.<\/p>\n<p>Per a la cobertura de confitura, posarem l\u2019aigua i la melmelada en un cass\u00f3 i ho farem bullir. Hi afegirem l\u2019agar agar i ho remenarem amb l\u2019ajuda d\u2019unes varetes. Ho deixarem coure a foc baix durant 5 minuts. Despr\u00e9s, ho colarem per evitar possibles restes d\u2019agar agar o llavors de la melmelada i ho buidarem en un recipient petit i estret (tipus tassa de caf\u00e8) i comen\u00e7arem a banyar els cors de foie amb la cobertura de melmelada. No tingueu por de l\u2019impacte t\u00e8rmic d\u2019una cosa calenta i l\u2019altre de congelada, ens ajudar\u00e0 a guanyar temps.<\/p>\n<p>Quan estiguin coberts, els guardarem a la nevera un m\u00ednim de 30 minuts perqu\u00e8 la cobertura s\u2019endureixi . A l\u2019hora de servir, col\u00b7locarem cada cor a sobre de les torradetes. Si voleu un regal original tamb\u00e9 podeu col\u00b7locar-los en una capseta i fer-li un lla\u00e7 ben guapo, com si fos una capsa de bombons.<!--more--><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Empezaremos preparando la mousse de foie-gras.
