{"id":13645,"date":"2014-04-10T17:52:29","date_gmt":"2014-04-10T15:52:29","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=13645"},"modified":"2022-04-07T11:17:38","modified_gmt":"2022-04-07T09:17:38","slug":"porros-amb-salsa-romesco","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/porros-amb-salsa-romesco","title":{"rendered":"Porros amb salsa romesco"},"content":{"rendered":"<p><strong>Ingredients<\/strong>:<br \/>\n(Per a 4 persones)<\/p>\n<ul>\n<li>8 porros<\/li>\n<li>Oli d\u2019oliva<\/li>\n<\/ul>\n<p>De la salsa romesco:<\/p>\n<ul>\n<li>12 ametlles torrades<\/li>\n<li>12 avellanes torrades<\/li>\n<li>5 nyores posades en remull la nit abans<\/li>\n<li>1 cabe\u00e7a d\u2019alls<\/li>\n<li>2 tom\u00e0tigues ben madures de mida mitjana<\/li>\n<li>50 g d\u2019oli d\u2019oliva<\/li>\n<li>15 g de vinagre de vi<\/li>\n<li>1\/2 llesqueta de pa fregit<\/li>\n<li>pebre bo<\/li>\n<li>sal<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3<\/strong>:<\/p>\n<p>Per fer la recepta de porros amb salsa romesco, primer de tot coeu al forn els alls i les tom\u00e0tigues. Els alls han de ser ben tendres (50-60 minuts de forn a 180\u00ba).<\/p>\n<p>Pelau les nyores (cal paci\u00e8ncia). Picau la polpa.<\/p>\n<p>En ser cuits els alls i la tom\u00e0tiga, pelau-los i picau-los. Dins un morter gros, picau les ametlles i les avellanes fins que quedin finetes. Afegiu-hi ara els alls, el pa fregit esmicolat, la tom\u00e0tiga i la nyora. Picau b\u00e9 el conjunt, salpebrau-lo i anau afegint-hi l\u2019oli de mica en mica remenant com per fer maonesa. Llavors, el vinagre. Comprovau el punt de sal i rectificau si fos prec\u00eds.<\/p>\n<p>Deixau reposar la salsa durant almenys tres hores (millor encara tota la nit: \u00e9s millor). Si s\u2019ha espessit massa, aclariu-la amb un poc m\u00e9s d\u2019oli.<\/p>\n<p>Pelau els porros, eliminau-na la part verda m\u00e9s llenyosa. Rentau-los. Posau una olla al foc amb aigua. Quan bulli, abocau-hi els porros i coeu-los durant 5 minuts. Colau-los i deixau-los refredar una mica.<\/p>\n<p>Posau una planxa al foc.
