{"id":14415,"date":"2014-09-25T17:45:05","date_gmt":"2014-09-25T15:45:05","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=14415"},"modified":"2022-04-07T11:17:44","modified_gmt":"2022-04-07T09:17:44","slug":"fideus-de-vermar","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/fideus-de-vermar","title":{"rendered":"Fideus de vermar"},"content":{"rendered":"<p><strong>Ingredients<\/strong>:<br \/>\n<em>Per a 4 persones<\/em><\/p>\n<ul>\n<li>1\/2 quilo de cuixa de xot (pesada sense os)<\/li>\n<li>2 litres de brou de carn (es pot fer amb els ossos de la cuixa)<\/li>\n<li>1 ceba mitjana<\/li>\n<li>2 alls<\/li>\n<li>2 tom\u00e0tigues de ramellet<\/li>\n<li>1 brot de farigola<\/li>\n<li>1 brot de moraduix<\/li>\n<li>Un pessic de canyella m\u00f2lta<\/li>\n<li>4 claus d\u2019esp\u00e8cia m\u00f2lts<\/li>\n<li>oli d\u2019oliva<\/li>\n<li>Sal<\/li>\n<li>Pebre bo<\/li>\n<li>200 g de fideus<\/li>\n<li>1 pebre coent (o mig, segons el gust de cadasc\u00fa)<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3<\/strong>:<\/p>\n<p>Eliminau el greix de la carn i tallau-la a trossos petits.<\/p>\n<p>Posau una greixonera un poc fonda al foc amb 4 cullerades d\u2019oli d\u2019oliva i en ser calent tirau-hi les tallades de carn i els dos alls, un poc esclafats i amb la pell. Salpebrau-la i sofregiu-la fins que es dauri. Mentrestant, pelau la ceba i picau-la ben fina. Ratllau les tom\u00e0tigues.<\/p>\n<p>Posau el brou al foc.<\/p>\n<p>Quan la carn ja tengui color, incorporau-hi la ceba i abaixau el foc al m\u00ednim. Feis coure el conjunt remenant de tant en tant. Quan la ceba sigui transparent, afegiu-hi la tom\u00e0tiga i apujau al foc. Feis-ho coure fins que la tom\u00e0tiga tengui un aspecte brillant. Abocau-hi ara el brou bullent. Incorporau-hi la farigola, el clau, el moraduix, la canyella i el pebre coent fet a trossos i feis bullir el conjunt al m\u00ednim fins que la carn sigui ben tendra (aproximadament 1 hora). Comprovau el punt de sal i rectificau si cal.<\/p>\n<p>Abocau els fideus dins el brou bullent i coeu-los el temps que indiqui el paquet.
