{"id":15629,"date":"2015-01-15T00:28:58","date_gmt":"2015-01-14T23:28:58","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=15629"},"modified":"2022-04-09T12:04:40","modified_gmt":"2022-04-09T10:04:40","slug":"recepta-tortell-de-reis","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/recepta-tortell-de-reis","title":{"rendered":"Recepta tortell de reis"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>Per a la primera part de la massa:<\/strong><\/p>\n<p>10 g de llevat premsat, 35 g d\u2019aigua, 75 g de farina.<\/p>\n<p>Per a la segona part:<\/p>\n<p>35 g de sucre, 20 g de llard, 250 g de farina, 2 g de sal, 1 ou, ratlladura de llimona, 65 g d\u2019aigua.<\/p>\n<p><strong>Per al massap\u00e0:<\/strong><\/p>\n<p>150 g de pols d\u2019ametlla, 150 g de sucre, aigua (la necess\u00e0ria).<\/p>\n<p><strong>Per a la decoraci\u00f3:<br \/>\n<\/strong><\/p>\n<p>Fruites confitades a voluntat, 10 g sucre bolado o esponjat.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Elaboraci\u00f3<\/strong><\/p>\n<p><strong>Massa, primera part:<\/strong><\/p>\n<p>En un bol, triturem el llevat premsat amb la m\u00e0, notem com es desf\u00e0 mentre hi afegim l\u2019aigua i ho batem a m\u00e0. Hi afegim la farina. Ho remenem fins que obtenim una massa homog\u00e8nia. Tapem la massa amb un drap de cuina i la deixem en un lloc tebi i sense corrents d\u2019aire, a uns 22 graus. El forn, sense encendre, pot ser un bon lloc. Deixem que dobli el volum.<\/p>\n<p><strong>Massap\u00e0:<\/strong><\/p>\n<p>Mentrestant, preparem el massap\u00e0: mesclem la pols d\u2019ametlla i el sucre. Quan estiguin ben barrejats hi afegim l\u2019aigua i fem una massa prou tova perqu\u00e8 no se\u2019ns trenqui. Sobre la superf\u00edcie enfarinada, hi fem forma de xurro i hi col\u00b7loquem el rei o reina i la fava a l\u2019interior.<\/p>\n<p><strong>Massa, segona part:<\/strong><\/p>\n<p>A l\u2019atuell o a la m\u00e0quina d\u2019amassar hi posem:<br \/>\nPrimer el sucre, despr\u00e9s la sal, el llard (a temperatura ambient), la ratlladura de llimona i l\u2019aigua, perqu\u00e8 es desfacin b\u00e9 la sal i el sucre. Hi afegim l\u2019ou, que haurem trencat a part, per assegurar-nos de no posar cap resta de la closca, i la farina. Amassem fins que ens quedi ben el\u00e0stica i hi afegim la massa amb llevat, que ja ha pujat el doble del seu volum. Tornem a amassar i quan tota la massa ens quedi ben el\u00e0stica (com un xiclet) ja est\u00e0 a punt. Per comprovar-ho, el millor \u00e9s estirar-la amb les mans: si se\u2019ns trenca, vol dir que encara falta treballar-la. L\u2019estirem sobre el marbre tot fent un xurro, amb l\u2019ajuda d\u2019un corr\u00f3. Hi col\u00b7loquem el massap\u00e0 a sobre i, amb la massa, l\u2019embolcallem. Ens ha de quedar el massap\u00e0 a l\u2019interior, com en un farcit. Ara, la deixarem fermentar per segona vegada seguint el mateix procediment: tapada amb un drap i en un lloc tebi i sense corrents d\u2019aire. Durant dues hores aproximadament o fins que hagi doblat el seu volum. Un cop ha llevat el tornem a pintar amb ou. El decorem: hi posem les fruites confitades al gust. I el sucre bolado o esponjat. Finalment el posem al forn a 230\u00ba durant uns vint minuts. Hem de tenir la precauci\u00f3 de col\u00b7locar-lo ben al mig de la safata perqu\u00e8 ens pugi de manera uniforme.<\/p>\n<p>Bon profit i que la sort us coroni!
