Seguidament banyem generosament amb oli d\u2019oliva, el vi ranci, el conyac i l\u2019aigua o brou. Posem els grans d\u2019all repartits per la safata i la fulleta de llorer i enfornem a uns 150\u00ba unes dues horetes. Anirem remullant l\u2019espatlla de tant en tant amb el suc de la cocci\u00f3 i li donarem la volta a la meitat del temps. Si cal, afegirem una mica m\u00e9s de brou.<\/p>\n<p>Seguidament, apujarem la temperatura del forn a uns 250\u00ba (Si cal tamb\u00e9 la part de dalt, si tenim un forn dom\u00e8stic) i deixarem coure l\u2019estona suficient perqu\u00e8 ens quedi dauradeta per fora.<\/p>\n<p>30 o 40 minuts abans d\u2019acabar la cocci\u00f3 i podem posar unes patates petites senceres, tipus bufet.<\/p>\n<p>Tamb\u00e9 podem posar-hi uns tomacons oberts pel mig per completar la guarnici\u00f3.<\/p>\n<p>I ja tenim l\u2019espatlla a punt d\u2019anar a taula. Ah!
