{"id":3739,"date":"2012-03-14T10:35:14","date_gmt":"2012-03-14T10:35:14","guid":{"rendered":"http:\/\/anardetapes.cat\/restaurantsmallorca\/?p=1499"},"modified":"2022-04-07T11:16:44","modified_gmt":"2022-04-07T09:16:44","slug":"recepta-recuit-de-drap","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/recepta-recuit-de-drap","title":{"rendered":"Recuit de drap"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>&#8211; Llet fresca de vaca o d\u2019ovella (quant m\u00e9s fresca, millor).<br \/>\n&#8211; Suc de llimona (la proporci\u00f3 \u00e9s, depenent de la mida de les llimones, d\u2019una llimona per litre de llet).<br \/>\n&#8211; Sucre, mel o grana de capell\u00e0 per acompanyar.<\/p>\n<p><strong>Preparaci\u00f3<\/strong><\/p>\n<p>Ficau la llet en una olla i posau-la a foc per escalfar-la fins que gaireb\u00e9 bulli (per\u00f2 sense arribar-hi).<\/p>\n<p>Apagau el foc i abocau el suc de la llimona, que abans haurem colat amb un colador fi per treure possibles restes de polpa i pinyols.<\/p>\n<p>Remenau-ho molt a poc a poc amb una cullera de fusta i veurem com la llet va quallant: d\u2019una banda, es forma el recuit; de l\u2019altra, va quedant el s\u00e8rum de la llet. Es deixa reposar fins que estigui fred del tot, ho colau amb un drap de fil o gasa, i ho penjau perqu\u00e8 vagi escolant el xerigot.<\/p>\n<p>\u00c9s important no premsar-lo amb el drap per accelerar el proc\u00e9s, perqu\u00e8 quedaria massa eixut.<\/p>\n<p>Un cop hagi escorregut b\u00e9, el desam a la gelera tapat amb un film transparent. Aix\u00f2 \u00e9s important perqu\u00e8 ens aguanti b\u00e9, per\u00f2 no \u00e9s aconsellable consumir-lo m\u00e9s enll\u00e0 de tres o quatre dies.<\/p>\n<p>Bon profit!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Per saber-ne m\u00e9s<\/strong>&#8230;<br \/>\nUna de les postres m\u00e9s apreciades al Baix Empord\u00e0 (els escrits d\u2019en Josep Pla en s\u00f3n testimoni) \u00e9s el recuit de drap. Aquesta varietat no \u00e9s altra cosa que el recuit est\u00e0ndard, per\u00f2 escorregut en un drap, de manera que no guarda tant de xerigot (s\u00e8rum de la llet) i t\u00e9 una consist\u00e8ncia m\u00e9s s\u00f2lida que el recuit al que estem acostumats. Vaja, que el que en resulta \u00e9s m\u00e9s un mat\u00f3 que un recuit per menjar amb cullera.<br \/>\nEl recuit de drap tradicional es quallava amb herbacol (tamb\u00e9 dita pres\u00f3 o flor d\u2019escarxofera borda i que al Baix Empord\u00e0 es troba encara a molts de marges). Avui dia, per\u00f2, \u00e9s m\u00e9s habitual fer servir quall animal o vegetal, que podeu trobar a les farm\u00e0cies, diet\u00e8tiques i botigues d\u2019herbes remeieres.
