Aquesta textura s&#8217;aconsegueix coguent-los en dues etapes, amb dues temperatures diferents.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Els cannel\u00e9s daten de principis del segle XVI. Les monges del convent d&#8217;Annonciades de Bordeus els van crear amb ingredients sobrants que recuperaven: la farina, el sucre, la vainilla i el rom dels bucs que atracaven en el port de la ciutat, i els rovells d&#8217;ou dels cellers de la regi\u00f3 que utilitzaven les clares per aclarir el vi. Repartien els canel\u00e9s entre els pobres o els venien. La recepta va ser rescatada i popularitzada en 1830 per un pastisser bordel\u00e9s que els va convertir en una especialitat de la ciutat.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Els aut\u00e8ntics es couen en uns motlles acanalats de coure (suposo que d&#8217;aqu\u00ed el nom). Jo els vaig fer en uns motlles tamb\u00e9 acanalats per\u00f2 de silicona, que la meva mare tenia des de feia temps.<\/div>\n<div><\/div>\n<p><strong>Ingredients<\/strong><br \/>\n<em>Per a 16 cannel\u00e9s (o pastissets)<\/em><\/p>\n<ul>\n<li>1\/2 litre de llet<\/li>\n<li>1 branca de vainilla<\/li>\n<li>25 grams de mantega<\/li>\n<li>125 grams de farina<\/li>\n<li>250 grams de sucre<\/li>\n<li>2 ous<\/li>\n<li>2 rovells d\u00b4ou<\/li>\n<li>1 raig de rom<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3<\/strong><\/p>\n<p>Poseu a bullir la llet amb la mantega i la vainilla.\u00a0Despr\u00e9s, barregeu la farina i el sucre. A continuaci\u00f3 bateu els dos ous amb els rovells i afegiu a la barreja de farina i sucre i mescleu-ho tot.<\/p>\n<p>Aboqueu la llet damunt d&#8217;aquesta barreja (sense la vainilla) i bateu-ho tot molt b\u00e9. Despr\u00e9s, deixeu\u00a0reposar aquesta massa un parell d&#8217;hores. Afegiu-hi un raig de rom i remeneu-ho.<\/p>\n<p>Unteu de mantega els motlles de <em>cannel\u00e9s<\/em> i repartiu entre aquests la massa. No s&#8217;ha omplir del tot els motlles perqu\u00e8 la massa pujar\u00e0 dins el forn.<\/p>\n<p>Quan tingueu els motlles amb la pasta, poseu-los a coure cinc o vuit minuts a 250\u00ba, despr\u00e9s baixeu la temperatura a 170\u00ba i cogueu-los fins que estiguin ben fets. Deixeu-los refredar un poc abans de treure del motlle.
