{"id":7541,"date":"2013-05-20T22:33:27","date_gmt":"2013-05-20T22:33:27","guid":{"rendered":"http:\/\/anardetapes.cat\/?p=7541"},"modified":"2013-05-21T21:55:06","modified_gmt":"2013-05-21T21:55:06","slug":"arros-amb-conill-i-cargols","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/arros-amb-conill-i-cargols","title":{"rendered":"Arr\u00f2s amb conill i cargols"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>per a 4 persones.<\/p>\n<p>1 Conill, preferentment de ca\u00e7a<br \/>\n500 grams d&#8217;arr\u00f2s bomba<br \/>\n2 tom\u00e0quets madurs<br \/>\n2 grans d&#8217;all<br \/>\n1 nyora<br \/>\nPebrot verd<br \/>\n4 dotzenes de cargols vinyals<br \/>\nOli d&#8217;Oliva verge extra<br \/>\nSafr\u00e0.<br \/>\n1 branqueta de roman\u00ed o de farigola.<br \/>\nSal<br \/>\nAigua<br \/><strong>Elaboraci&oacute;<\/strong><br \/>Primer de tot, netegem els cargols, aix\u00f2 ho farem posant-los sota l&#8217;aigua freda en una ollaamb sal i remenant constantment, mentre anem canviant l&#8217;aigua fins que deixin de deixar anar aquesta mena de baba caracter\u00edstica.<br \/>\nSeguidament, els &#8220;enganyarem&#8221;, \u00e9s a dir, els posem a foc lent amb aigua freda, fins que sortin completament de la closca i s&#8217;ofeguin. Si alg\u00fan no surt, val m\u00e9s llen\u00e7ar-lo. Els reservem.<\/p>\n<p>Col\u00b7loquem la paella al foc amb l&#8217;oli i fregim el conill tallat en trossos petits. Quan va prenent color hi afegim el tom\u00e0quet ratllat sense pell, l&#8217;all, la carn de la nyora i el pebrot, fins que estigui tot aix\u00f2 ben ofegat.<\/p>\n<p>Posem el conill i el tom\u00e0quet a una cassola amb uns 2 litres d&#8217;aigua, i es bull fins que la carnestigui prou tova. Despr\u00e9s, una altra vegada a la paella, s&#8217;agrega l&#8217;anterior i s&#8217;assaonaamb sal, pebre i safr\u00e0. Es posen l&#8217;arr\u00f2s i els cargols, i es deixen coure durant uns 18-20minuts a foc viu,(de llenya) i deixant reposar uns minuts abans de servir.<\/p>\n<p>Com podeu comprovar, en aquesta recepta, la t\u00e8cnica de fer l&#8217;arr\u00f2s \u00e9s, primer posant-li l&#8217;aigua i despr\u00e9s l&#8217;arr\u00f2s. Jo l&#8217;he fet m\u00e9s a l&#8217;estil d&#8217;aqu\u00ed, rossejant primer l&#8217;arr\u00f2s i despr\u00e9s afegint-li l&#8217;aigua o el brou.<\/p>\n<p>Als ingredients de la recepta original d&#8217;aquest arr\u00f2s, jo he afegit una mica de pebrot verd, 3 grans d&#8217;all i la carn d&#8217;un parell de nyores.<br \/>\nUn cop fet el sofregit, rossegem l&#8217;arr\u00f2s, tal i com he dit abans. Aix\u00f2 ho farem perqu\u00e8 l&#8217;arr\u00f2s deixi anar el mid\u00f3 i quedi ben suelto.<br \/>\nTot seguit, afegim el conill, pr\u00e8viament fregit a la mateixa paella i els cargols i li tirem l&#8217;aigua o un brou suau de carn o verdures. Ho deixem coure a foc fort tres o quatre minuts i l&#8217;enfornem uns 15 minuts a uns 200\u00ba. Treiem del forn, deixem reposar un parell de minuts i plat a punt!!
