{"id":8199,"date":"2013-07-21T01:01:23","date_gmt":"2013-07-20T23:01:23","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=8199"},"modified":"2022-04-07T11:17:23","modified_gmt":"2022-04-07T09:17:23","slug":"banoffee-pie","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/banoffee-pie","title":{"rendered":"Banoffee pie"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 pot de llet condensada de 400 g<\/li>\n<li>1 paquet de galetes (aprox 130 g)<\/li>\n<li>80-100 g de mantega<\/li>\n<li>2-3 pl\u00e0tans<\/li>\n<li>250-300 ml nata* per muntar ben freda<\/li>\n<li>1 sobre d\u2019estabilitzant de nata (opcional per\u00f2 recomanable sobre tot a l\u2019estiu)<\/li>\n<li>xocolata ratllada\/ fideus de xocolata per a decorar<\/li>\n<\/ul>\n<p>*Si t\u2019has fixat, no tenim sucre entre els ingredients. No posarem gens de sucre a la nata, el toffee ja ens proporcionar\u00e0 la dol\u00e7or al past\u00eds.<\/p>\n<p>Estris: olla\/olla de pressi\u00f3, esp\u00e0tula, TMX o picadora i m\u00e0quina muntar nata, motlle desmuntable de 23-25 cm de di\u00e0metre<br \/>\n<strong><\/strong><\/p>\n<p><strong>Elaboraci\u00f3<\/strong><br \/>\nA) Dol\u00e7 de llet:<\/p>\n<p>1. L\u2019elaboraci\u00f3 del dol\u00e7 de llet es pot fer de dues maneres: amb un cass\u00f3 o amb una olla de pressi\u00f3, per\u00f2 sempre amb el pot tancat.<\/p>\n<p>1.1. En un cass\u00f3: posa el pot de llet condensada (sense obrir) a dins d\u2019un cass\u00f3. Cobreix-lo d\u2019aigua. Cou a foc moderat durant dues hores i quart (aproximadament) comprovant en tot moment que el pot est\u00e0 cobert amb aigua.<\/p>\n<p>1.1. En olla de pressi\u00f3: posa el pot de la llet (sense obrir) a dins d\u2019una olla de pressi\u00f3. Cobreix-lo amb aigua, uns dos dits per sobre del pot. Tapa l\u2019olla i cou a foc moderat. Calcula 30 minuts a partir que comence a sortir vapor.<\/p>\n<p>El resultat ser\u00e0 el mateix fent-ho en olla normal o de pressi\u00f3, per\u00f2 amb l\u2019olla de pressi\u00f3 estalvies molt de temps i gas\/llum.<\/p>\n<p>RECORDA, MOLT IMPORTANT: que el pot sempre estiga cobert d\u2019aigua durant la cocci\u00f3 (tant si el fas amb olla convencional o amb olla de pressi\u00f3) i que no obrim el pot fins que no estiga completament fred.<\/p>\n<p>Nota: Et recomane que faces el dol\u00e7 de llet el dia d\u2019abans, per exemple o fins i tot amb m\u00e9s temps d\u2019antelaci\u00f3. Pensa que un cop cuit, com el pot continua tancat, el toffee no se\u2019ns estropejar\u00e0. Per tant, \u00e9s una elaboraci\u00f3 que pots tenir llesta en qualsevol moment.<\/p>\n<p>At\u00e8s que el pot estar\u00e0 una estona submergit en aigua, \u00e9s convenient que si t\u00e9 etiqueta de paper, li traiem.<\/p>\n<p>B) Base de galetes:<\/p>\n<p>1. (Escalfa el forn a 180\u00ba funci\u00f3 ventilador.)<\/p>\n<p>2. Trenca les galetes en 2 \u00f3 4 trossos. Tritura amb la teua picadora o amb la TMX donant uns cops de turbo.<\/p>\n<p>3. Afegeix la mantega tallada a daus i d\u00f3na uns cops de turbo fins que estiga ben barrejada amb les galetes. Si no ho fas amb TMX, barreja la mantega amb les mans.<\/p>\n<p>4. Cobreix la base d\u2019un motlle desmuntable i pressiona b\u00e9 perqu\u00e8 quede ben llisa.<\/p>\n<p>5. Enforna durant 10-12 minuts a 180\u00ba fins que quede daurada.<\/p>\n<p>6. Una vegada cuita, deixa refredar.<\/p>\n<p>C) Muntatge del past\u00eds:<\/p>\n<p>1. Una vegada estiga feta la base, posa per damunt una capa del toffee que ha resultat de &#8220;coure&#8221; la llet condensada. Deixa ben llisa la superf\u00edcie.<\/p>\n<p>2. Talla els pl\u00e0tans a rodanxes i posa\u2019ls damunt de la capa de toffee.<\/p>\n<p>3. Munta la nata: Ha d\u2019estar ben freda. Si ho fas amb TMX, posa la papallona a les fulles i bat a velocitat 3,5. Trigar\u00e0 menys d\u2019un minut per tant no programes temps, mira pel bocal i para la m\u00e0quina quan veges que ja est\u00e0 muntada. (V\u00e9s amb compte perqu\u00e8 si et passes far\u00e0s mantega).<\/p>\n<p>Si tens estabilitzant de nata, afegeix-li, sin\u00f3 no passa res. L\u2019estabilitzant far\u00e0 que ens aguante m\u00e9s temps la nata ferma, sobre tot ara a l\u2019estiu, per\u00f2 sin\u00f3 en tens, no passa res, munta la nata just abans de servir el past\u00eds.<\/p>\n<p>Posa la nata per sobre dels pl\u00e0tans i allisa la superf\u00edcie.<\/p>\n<p>4. Finalment decora amb xocolata ratllada o fideus de xocolata i posa en la nevera fins a l\u2019hora de servir. Desemmotlla just abans de servir.<\/p>\n<p>Notes: Aquest \u00e9s un past\u00eds que potser l\u2019\u00fanica complicaci\u00f3 que t\u00e9 \u00e9s la de coure la llet condensada. El dia que la fas, pots fer m\u00e9s d\u2019un pot i conservar-lo sense obrir fins la propera vegada que la vages a fer.<\/p>\n<p>Temps total: amb el dol\u00e7 de llet fet, 15-20 minuts<br \/>\nBon
