{"id":9315,"date":"2013-11-21T13:29:05","date_gmt":"2013-11-21T12:29:05","guid":{"rendered":"http:\/\/gastronomicament.cat\/?p=9315"},"modified":"2022-04-07T11:17:29","modified_gmt":"2022-04-07T09:17:29","slug":"pastis-de-creps-amb-bolets","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/ca\/recepta\/pastis-de-creps-amb-bolets","title":{"rendered":"Past\u00eds de creps amb bolets"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n(per a 12 creps):<\/p>\n<p>100 g farina<br \/>\n1 pessic de sal<br \/>\n1 ou d&#8217;agricultura ecol\u00f2gica<br \/>\n1 rovell d&#8217;agricultura ecol\u00f2gica<br \/>\n250 ml llet<\/p>\n<p>15 g mantega fosa<br \/>\nmantega fosa per untar la paella<\/p>\n<p>Per al farciment:<br \/>\nbolets variats (rossinyols, camagrocs, trompetes de la mort&#8230;)<br \/>\noli<br \/>\nsal marina<br \/>\npebre acabat de moldre<br \/>\nbeixamel (llet, mantega, farina, nou moscada, pebre i sal)<br \/>\n<strong>Elaboraci\u00f3<\/strong><br \/>\nComencem preparant les creps:<\/p>\n<p>Passem pel sed\u00e0s la farina i la sal i les posem en un bol. Hi afegim els ous. Amb un batedor barregem els ingredients mentre anem incorporant la llet de mica en mica. Finalment, hi afegim la mantega fosa. No deixem de batre fins a aconseguir una massa sense grumolls.<\/p>\n<p>La deixem reposar mitja hora.<\/p>\n<p>Escalfem una paella d&#8217;uns 18 cm de di\u00e0metre. Amb un pinzell n&#8217;untem la base amb mantega fosa. L&#8217;apartem del foc i hi aboquem 1\/2 cullerot de massa, tot bellugant la paella perqu\u00e8 la massa vagi rodolant fins a cobrir tota la base de la paella. Aleshores la tornem a posar al foc fins que la crep comenci a agafar color. Li donem la volta i la coem per l&#8217;altre costat mig minut m\u00e9s.<\/p>\n<p>La posem en un plat i tornem a repetir totes les operacions fins a acabar la massa. Amb aquesta quantitat surten 12 creps, per\u00f2 nom\u00e9s en vaig fer 9. La resta, la vaig posar en una paella m\u00e9s petita, de 10 cm de di\u00e0metre, per fer el past\u00eds de 5 pisos de mida individual que veieu a la fotografia.<\/p>\n<p>Posem unes gotes d&#8217;oli en una paella i hi saltegem els bolets per separat, primer els camagrocs, despr\u00e9s els rossinyols i finalment les trompetes. Un cop cuits els salpebrem i els reservem.<\/p>\n<p>Per fer la beixamel, fonem mantega en un cass\u00f3, hi afegim farina, remenem i la deixem coure un parell de minuts. Hi aboquem la llet calenta, remenant a consci\u00e8ncia fins a aconseguir una salsa sense grumolls. Hi afegim tamb\u00e9 l&#8217;aigua que han deixat anar els bolets, si cal.<\/p>\n<p>La deixem coure durant 10 minuts, remenant sovint. Hi posem sal, i nou moscada i pebre acabats de moldre.<\/p>\n<p>Per fer el past\u00eds ens ajudarem d&#8217;un c\u00e8rcol de cuina de 10 cm de di\u00e0metre. Hi posem una crep, els camagrocs i 2 cullerades de salsa beixamel. I repetim fins a acabar les creps.
