El xef\u00a0<strong>Javier Gardonio<\/strong>\u00a0aposta per una cuina selecta, fruit de la seva experi\u00e8ncia a cuiners d&#8217;alta cuina com Sergi Arola, Martin Berasategui, tot i que la seva influ\u00e8ncia principal ha estat el cuiner<strong>Fernando P. Arellano<\/strong>, amb qui ha treballat 12 anys al reputat\u00a0<strong>restaurant Zaranda<\/strong>, primer a Madrid i despr\u00e9s Mallorca.<\/p>\n<p>Hi hem tastat els\u00a0<strong>nems de porcella<\/strong>\u00a0a l&#8217;estil pibil, amb pur\u00e9 d&#8217;alvocat, coriandre i nixpel; el bra\u00e7 de me amb bulgur, iogurt i hummus casol\u00e0, el\u00a0<strong>moll amb arr\u00f2s basmati<\/strong>\u00a0a l&#8217;estil pad thai o la\u00a0<strong>tartaleta de xocolata amb dol\u00e7 de llet<\/strong>\u00a0i cacauet i gelat de vainilla; un recorregut cosmopolita que t\u00e9 en compte el producte local i de kil\u00f2metre zero. A part de la carta, cada migdia ofereixen un men\u00fa setmana. L&#8217;<strong>atenci\u00f3 al comensal<\/strong>\u00a0\u00e9s una prioritat, com tamb\u00e9 ho s\u00f3n el detalls a l&#8217;artesania, que es manifesten en la recuperaci\u00f3 d&#8217;elements originals de l&#8217;edifici -per exemple les rajoles hidr\u00e0uliques, la xemeneia, etc.- fins a la vaixella, feta pels artesans mallorquins de\u00a0<strong>Terra Cuita<\/strong>.<\/p>\n<p>Aquest restaurant de Palma es troba ubicat a l&#8217;<strong>hotel boutique Gl\u00f2ria de Sant Jaume<\/strong>, un casal del segle XV carregat d&#8217;hist\u00f2ria, que ha estat rehabilitat i reformat amb molt bon gust per la fam\u00edlia hotelera Cabau. L&#8217;hotel de 5 estrelles, t\u00e9 14 habitacions i un spa amb la piscina m\u00e9s grossa en un hotel d&#8217;aquestes caracter\u00edstiques.
