{"id":58064,"date":"2021-08-19T08:24:35","date_gmt":"2021-08-19T06:24:35","guid":{"rendered":"https:\/\/gastronomicament.cat\/les-altes-temperatures-fan-avancar-la-verema-de-2021"},"modified":"2021-08-19T08:24:35","modified_gmt":"2021-08-19T06:24:35","slug":"les-altes-temperatures-fan-avancar-la-verema-de-2021","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/de\/les-altes-temperatures-fan-avancar-la-verema-de-2021","title":{"rendered":"Les altes temperatures fan avan\u00e7ar la verema de 2021"},"content":{"rendered":"<p>Els<strong>\u00a0viticultors i cellers de Mallorca\u00a0<\/strong>han donat el\u00a0<strong>sus\u00a0<\/strong>a la\u00a0<strong>verema 2021<\/strong>, una acci\u00f3 que<strong>\u00a0s&#8217;ha avan\u00e7at\u00a0<\/strong>per mor de les<strong>\u00a0altes temperatures<\/strong>\u00a0que s&#8217;han viscut aquests dies. De fet, els primers en anunciar que comen\u00e7aven la verema fou la denominaci\u00f3 d&#8217;origen\u00a0<strong>Pla i Llevant<\/strong>\u00a0i la indicaci\u00f3 geografica\u00a0<strong>Vi de la Terra Mallorca<\/strong>, que ho varen fer dia 13 d&#8217;agost. Totes dues entitats remarcaren que aquest avan\u00e7ament de la verema comen\u00e7a a ser habitual perqu\u00e8 els estius s\u00f3n molt m\u00e9s calorosos i m\u00e9s secs. Tamb\u00e9 apuntaren que la verema 2021 s&#8217;espera que sigui molt m\u00e9s bona que la del 2020 ja que el ra\u00efm t\u00e9 molt bona salut.<\/p>\n<p>Per la seva banda, els viticultors i cellers Biniagual i Santa Catarina, de la <strong>denominaci\u00f3 d&#8217;origen\u00a0<\/strong>de\u00a0<strong>Binissalem<\/strong>, varen comen\u00e7ar a veremar tres dies despr\u00e9s (dia 16 d&#8217;agost), mentre que properament ho faran altres cellers com Can Ramis, Jos\u00e9 L. Ferrer i Vins Nadal, entre d&#8217;altres.<\/p>\n<p>Els viticultors valoren el grau de maduraci\u00f3 idoni, \u00e9s a dir, tant la concentraci\u00f3 de sucres com la maduraci\u00f3 fen\u00f2lica, que determinar\u00e0 el moment \u00f2ptim en funci\u00f3 del vi al que es destini aquest ra\u00efm, par\u00e0metres condicionats per la disponibilitat d\u2019aigua i la temperatura ambiental.<\/p>\n<p>Tamb\u00e9 remarquen que un any m\u00e9s\u00a0<strong>es preveu una menor producci\u00f3 de ra\u00efm i per tant un menor volum d\u2019elaboraci\u00f3 de vi<\/strong>, fet que incidir\u00e0 sobre les exist\u00e8ncies de vi als cellers, encara elevades a causa dels efectes de la covid\u201019 sobre la comercialitzaci\u00f3. A m\u00e9s, esmenten que<strong>\u00a0hi ha hagut una recuperaci\u00f3 en les vendes<\/strong>\u00a0que s&#8217;ha comen\u00e7at a percebre a la primavera i s\u2019ha mantingut a l\u2019estiu del 2021, per l\u2019activitat del sector de l\u2019hosteleria i de la restauraci\u00f3, com tamb\u00e9 per les visites d\u2019enoturisme als cellers.<\/p>\n<p>Des de la DO Binissalem apunten que la primavera ha estat freda, amb un mes d&#8217;abril sec i un mes de maig humit. Tot i que la segona meitat de juny es va considerar freda, al juliol. es van registrar alguns dies de temperatures molt elevades, per\u00f2 que no es perllongaven en el temps i no es va produir cap onada de calor, i l\u2019agost va comen\u00e7ar amb temperatures moderades. Aquestes condicions, feien preveure un retard en l\u2019inici de la verema, per\u00f2 la calabruixada del passat dissabte 30 de juliol, ho ha trastocat una mica. El calabruix i el vent, que pareixien haver seguit el Cam\u00ed de Muro en el seu mal fer, van afectar als municipis de Santa Maria, Consell, Binissalem i la zona de Biniali, de forma desigual a la vinyes i dins la mateixa vinya. Les ferides provocades per la pedra als grans de ra\u00efm, es van tractar r\u00e0pidament amb cicatritzants, per evitar que el ra\u00efm es podr\u00eds i afect\u00e9s a altres ra\u00efms intactes. Es calculen uns efectes negatius sobre la producci\u00f3. Els directes, que oscil\u2219len entre un 5 i un 20%, i els indirectes, per podridura dels ra\u00efms, que no es podran valorar fins que hagi acabat la campanya. A aquesta circumst\u00e0ncia, tamb\u00e9 li hem d\u2019afegir una gelada important al mes d\u2019abril, que afectava de manera desigual a les diferents zones i, fins i tot, dins la mateixa vinya.
