Conclusi\u00f3: s\u2019haur\u00e0 de produir un 70% m\u00e9s d\u2019aliments. A m\u00e9s, el creixement de la renda en molts pa\u00efsos en desenvolupament incrementar\u00e0 fortament la demanda de cereals i carn, fet que exigeix un canvi en el model d\u2019alimentaci\u00f3.<\/p>\n<p>En el context del canvi demogr\u00e0fic i clim\u00e0tic, els processos de producci\u00f3 d\u2019aliments s\u00f3n molt lluny de ser sostenibles. El model de l\u2019agricultura actual contribueix en gran mesura a la contaminaci\u00f3, a les emissions de gasos d\u2019efecte hivernacle, a la degradaci\u00f3 de la terra i a la p\u00e8rdua de biodiversitat, segons la FAO.<\/p>\n<p>Com a resposta a aquesta necessitat global, sorgeix el concepte d\u2019alimentaci\u00f3 sostenible i saludable (ASS). &#8222;L\u2019objectiu de les dietes sostenibles \u00e9s abordar les preocupacions creixents ambientals i de salut relacionades amb la producci\u00f3 i el consum d\u2019aliments&#8220; afirma Anna Bach, professora dels Estudis de Ci\u00e8ncies de la Salut de la UOC.<\/p>\n<p>Aquestes dietes han de promoure la producci\u00f3 i el consum responsables. Anna Bach, que \u00e9s investigadora del grup de recerca\u00a0<strong>FoodLab<\/strong>, apunta els factors que hem de tenir en compte com a consumidors i consumidores per a acostar-nos a una alimentaci\u00f3 sostenible i saludable:<\/p>\n<ul>\n<li>Els aliments que ingerim: cal prioritzar els productes d\u2019origen vegetal sobre els d\u2019origen animal.<\/li>\n<li>Les begudes que consumim: l\u2019aigua sense embotellar \u00e9s la millor opci\u00f3 per a hidratar-se.<\/li>\n<li>La quantitat d\u2019aliments ultraprocessats -\u00e9s a dir, que no contenen ingredients frescos- que mengem, ja que hauria de ser molt redu\u00efda: la dieta ideal est\u00e0 basada en aliments frescos, locals i de temporada.<\/li>\n<li>La pres\u00e8ncia de pl\u00e0stics en els envasos, que cal evitar sempre que sigui possible.<\/li>\n<li>El malbaratament d\u2019aliments: a les llars i restaurants s\u2019hauria de revisar la quantitat d\u2019aliments que deixem al plat, i la ind\u00fastria hauria de minimitzar els aliments malbaratats al llarg de la cadena aliment\u00e0ria.<\/li>\n<\/ul>\n<p><strong>M\u00e9s producci\u00f3 local per a una gastronomia sostenible<\/strong><\/p>\n<p>Les dietes sostenibles haurien de ser nutricionalment adients i segures i econ\u00f2micament justes i assequibles. A m\u00e9s, haurien de protegir i respectar la biodiversitat i els ecosistemes i ser culturalment coherents.<\/p>\n<p>\u00abEn una alimentaci\u00f3 sostenible, \u00e9s fonamental que la producci\u00f3 dels aliments sigui culturalment coherent -que no vingui imposada des de fora- i que no tingui una repercussi\u00f3 mediambiental considerable\u00bb, explica F. Xavier Medina, director de la C\u00e0tedra UNESCO d\u2019Alimentaci\u00f3, Cultura i Desenvolupament de la UOC.<\/p>\n<p>Per a Medina, el repte principal per a aconseguir una ASS \u00e9s el consum de productes de proximitat: \u00abSobretot, hem de tenir en compte que la major part del que mengem s\u2019ha produ\u00eft a molt\u00edssims quil\u00f2metres de dist\u00e0ncia. El transport fa cr\u00e9ixer molt la petjada ambiental d\u2019aquesta alimentaci\u00f3 i aix\u00f2 es pot resoldre promocionant la producci\u00f3 local\u00bb.<\/p>\n<p>En aquest sentit, una font de productes de proximitat s\u00f3n les cooperatives agroecol\u00f2giques, que cada cop tenen m\u00e9s pres\u00e8ncia. A Barcelona, han crescut un 58% en la darrera d\u00e8cada, segons recull la tesi doctoral de l\u2019investigador de la UOC Ricard Espelt.<\/p>\n<p><strong>Un canvi de dieta a Espanya reduiria la petjada ambiental<\/strong><\/p>\n<p>\u00abUna dieta mediterr\u00e0nia basada en aliments d\u2019origen vegetal (com fruites, verdures, llegums, llavors, nous o gra) i amb menys aliments d\u2019origen animal (especialment carn vermella i processada) t\u00e9 un impacte ambiental menor que altres patrons d\u2019alimentaci\u00f3\u00bb, afirma Anna Bach, que tamb\u00e9 \u00e9s directora del m\u00e0ster universitari d\u2019Alimentaci\u00f3 en l\u2019Activitat F\u00edsica i l\u2019Esport de la UOC.<\/p>\n<p>Una recerca de la investigadora Anna Bach compara l\u2019impacte ambiental d\u2019aquest model de dieta amb la ingesta mitjana d\u2019aliments actual a Espanya i als Estats Units. Les conclusions mostren que, a Espanya, l\u2019adopci\u00f3 d\u2019aquest model alimentari implicaria una reducci\u00f3 del 72% de l\u2019emissi\u00f3 de gasos d\u2019efecte hivernacle, una disminuci\u00f3 del 58% de la terra d\u2019\u00fas agr\u00edcola, una reducci\u00f3 del 52% del consum d\u2019energia i un estalvi del 33% de l\u2019aigua que es consumeix.
