Els seus pastors els tracten amb molt d&#8217;afecte. S\u00f3n vaques &#8222;felices&#8220; que s&#8217;acosten a la gent i tenen una vida molt relaxada, a m\u00e9s d&#8217;una alimentaci\u00f3 totalment natural, que es tradueix en una carn amb un greix exquisida, sovint amb aromes i sabors a herbes arom\u00e0tiques com ginebr\u00f3 a l&#8217;estiu, bruc a la primavera, esp\u00edgol o roman\u00ed. Vacum nom\u00e9s selecciona vaques velles que estan preparades per oferir la millor carn i s\u00f3n les m\u00e9s aptes per madurar (<em>Dry aged<\/em>). S\u00f3n de races r\u00fastiques i aut\u00f2ctones, principalment d&#8217;Ast\u00faries i Gal\u00edcia, com la\u00a0<em>casina asturiana<\/em>, l&#8216;<em>alistana sanabresa<\/em>, la\u00a0<em>sayaguesa\u00a0<\/em>i la rossa gallega.<\/p>\n<p><strong>El Beef Passaport<\/strong><\/p>\n<p>Vacum est\u00e0 introduint en el mercat balear (Mallorca, Eivissa i Menorca) una carta d&#8217;identitat exclusiva (un codi QR) dirigit a hotels i restaurants selectes.<\/p>\n<p>Les peces de Vacum disposen d&#8217;un codi QR Code &#8211; Beef Passport basat en un sistema d&#8217;informaci\u00f3 tecnol\u00f2gica que proporciona dades sobre el proc\u00e9s en la cadena de producci\u00f3 de la pe\u00e7a: des de l&#8217;origen fins a arribar al restaurant. Amb aquest passaport c\u00e0rnic, tamb\u00e9 es pot con\u00e8ixer la data i el pa\u00eds de naixement, el lloc de crian\u00e7a de la vedella o el bou, la ramaderia, el pes, les dates de sacrifici i especejament, el temps de maduraci\u00f3 de la carn, aix\u00ed com a refer\u00e8ncies sobre el ramader. Una t\u00e8cnica que proporciona una informaci\u00f3 transparent per garantir el producte.<\/p>\n<p><strong>Una carn premiada<\/strong><\/p>\n<p>La firma de carn Vacum tamb\u00e9 va presentar l&#8217;entrecot de vaca rossa gallega, que va guanyar la medalla de plata al World Steak Challenge 2016, celebrat a Londres el passat 22 de setembre de 2016. Es tracta del concurs c\u00e0rnic m\u00e9s important del m\u00f3n, que va reunir m\u00e9s de 100 participants d&#8217;arreu del m\u00f3n.
