Durant aquestes tres d\u00e8cades, Schwaiger ha fet seva la m\u00e0xima que\u00a0<strong>la cuina \u00e9s omplir la boca de gust<\/strong>.<\/p>\n<p>La festa va tenir lloc dijous dia 27 d&#8217;octubre i hi van assistir clients, amics i premsa especialitzada. L&#8217;acte tamb\u00e9 va servir per celebrar el primer aniversari del seu nou restaurant.<\/p>\n<p>Durant 25 anys, el cuiner va estar al capdavant dels fogons del restaurant Tristan. Tot just un any despr\u00e9s de l&#8217;obertura d&#8217;aquest restaurant, va ser guardonat una estrella Michelin. L&#8217;any 1990, va guanyar\u00a0la segona estrella Michelin; una distinci\u00f3 que va mantenir durant 19 anys. \u00a0Schwaiger, juntament amb\u00a0Koldo Royo\u00a0iJosef Sauerschell varen iniciar\u00a0una nova etapa en l&#8217;alta cuina a Mallorca.<\/p>\n<h4>Gerhard Schwaiger i Mallorca<\/h4>\n<p>Abans d&#8217;arribar a Mallorca, Gerhard Schwaiger va fer feina a Alemania als restaurants St. Stefanskeller, Katzenbergers Adler i Tantris.<\/p>\n<p>La carrera culin\u00e0ria de Gerhard Schwaiger a\u00a0Mallorca va comen\u00e7ar fa 30 anys. Era l&#8217;any 1986 quan Klaus Graf, creador del port Port Portals, i el xef Heinz Winckler, el m\u00e9s popular d&#8217;Alemanya i el cuiner m\u00e9s jove amb 3 estrelles Michelin, cercaven un cuiner per al restaurant Tristan de Port Portals, que era a punt d&#8217;obrir-se, i varen apostar per Schwaiger.<\/p>\n<p>Schwaiger comenta que, aleshores, el p\u00fablic de Mallorca no estava acostumat a la <em>nouvelle cuisine<\/em> i que, a m\u00e9s, hi havia pocs productes: &#8222;No hi havia t\u00f2fona, ni foie, i la mantega era dif\u00edcil d&#8217;aconseguir&#8230; hi havia porc i xot mallorqu\u00ed, aix\u00f2 s\u00ed, el millor porc del m\u00f3n&#8220;. Com que era complicat innovar, Schwaiger remarca que va apostar per la creativitat.<\/p>\n<h4>La reinvenci\u00f3 d&#8217;Schwaiger<\/h4>\n<p>Arran de la crisi econ\u00f2mica, el 2012 va renunciar a l&#8217;estrella Michelin i va apostar per reinventar-se. Per aquest motiu, l&#8217;any 2015 va n\u00e9ixer\u00a0el nou <a href=\"http:\/\/www.schwaiger.es\/\"><strong>restaurant Schwaiger<\/strong><\/a>, ubicat al centre comercial Son Moix de Palma, on mant\u00e9 la seva filosofia i estil, amb una cuina d&#8217;autor i mediterr\u00e0nia, per\u00f2 amb uns preus m\u00e9s assequibles per al p\u00fablic local.\u00a0En aquesta aventura gastron\u00f2mica l&#8217;acompanyen Johannes Jobst, a la cuina, i Cristina P\u00e9rez Paino i Juan L.
