Una possible soluci\u00f3 a aquesta recerca<br \/>\nde diversificaci\u00f3 dels vins \u00e9s la recuperaci\u00f3 i la reintroducci\u00f3 de varietats minorit\u00e0ries a la ind\u00fastria vitivin\u00edcola, ja que la personalitat i l\u2019autenticitat que aporten les varietats aut\u00f2ctones van lligades a l\u2019origen geogr\u00e0fic i a les caracter\u00edstiques clim\u00e0tiques del lloc.<\/p>\n<p>Diversos cellers de les Illes Balears han mostrat una preocupaci\u00f3 i un inter\u00e8s per les varietats aut\u00f2ctones per poder elaborar vins que potencien la seva singularitat gr\u00e0cies a l\u2019extensa i particular riquesa varietal d\u2019aquesta comunitat aut\u00f2noma.<\/p>\n<p>El proc\u00e9s d\u2019autoritzaci\u00f3 de la varietat escursac ha durat\u00a0deu anys, per\u00f2 ara, a partir de l\u20191 d\u2019octubre passat, arran de la publicaci\u00f3 en el <em>Butllet\u00ed Oficial de les Illes Balears<\/em> de l\u2019Ordre del conseller de Medi Ambient, Agricultura i Pesca de 20 de setembre de 2016 per la qual s\u2019inclou la varietat escursac, N. en la categoria de varietats de ra\u00efm de vinificaci\u00f3 autoritzades a les Illes Balears, ja \u00e9s possible plantar aquesta varietat de vinya, amb l\u2019autoritzaci\u00f3 pr\u00e8via del Registre Vit\u00edcola.<\/p>\n<p>L\u2019Institut de Recerca i Formaci\u00f3 Agr\u00e0ria i Pesquera (IRFAP) investiga aquesta varietat des de l\u2019any 2005, basant-se en els estudis molecular i morfol\u00f2gic. <strong>Amb aquests estudis, juntament amb els cellers col\u00b7laboradors, s\u2019han descrit les caracter\u00edstiques agron\u00f2miques i enol\u00f2giques que han perm\u00e8s dur endavant l\u2019autoritzaci\u00f3.<\/strong><\/p>\n<p>D\u2019acord amb les investigacions que ha dut a terme l\u2019IRFAP i gr\u00e0cies a la detecci\u00f3 de material vegetal que complia els requisits normatius que estableix el Ministeri d\u2019Agricultura, Alimentaci\u00f3 i Medi Ambient per a la inscripci\u00f3 de varietats en el Registre de varietats comercials (principalment criteris d\u2019identitat varietal, estat sanitari i descripci\u00f3 varietal), el mes de maig de 2011 es va sol\u00b7licitar inscriure-hi la varietat negra, aut\u00f2ctona, denominada <em>escursac<\/em>, que va ser autoritzada definitivament el 14 d\u2019abril de 2015, despr\u00e9s dels tr\u00e0mits t\u00e8cnics i administratius del Ministeri (Ordre AAA\/678\/2015, publicada en el BOE n\u00fam. 93, de 18 d\u2019abril de 2015).<\/p>\n<p><strong>Caracter\u00edstiques diferenciadores de la varietat escursac<\/strong><br \/>\nEl nom d\u2019aquesta varietat, citada per primera vegada per l\u2019arxiduc Llu\u00eds Salvador en la seva obra <em>Die Balearen<\/em> (1869-1891), perdura en la bibliografia antiga fins a l\u2019any 1933.<br \/>\n<a href=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/fulla-vinya-escursac.jpg\"><img decoding=\"async\" class=\"alignleft wp-image-18365 size-blog-image-2\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/fulla-vinya-escursac-330x270.jpg\" alt=\"fulla-vinya-escursac\" width=\"330\" height=\"270\" \/><\/a>\u00c9s una varietat resistent, sense problemes al camp, de brotada molt primerenca i cicle de maduraci\u00f3 de curt a mitj\u00e0, amb les fulles de mida mitjana i forma allargada. Fa un ra\u00efm compacte, de mida mitjana, i baies globoses.<br \/>\nT\u00e9 una capacitat productiva del voltant de 2,65\u00a0kg\/cep, i mostra un ajustament correcte respecte al vigor de la planta, cosa que garanteix una correcta maduraci\u00f3 del ra\u00efm. A m\u00e9s, en la verema aconsegueix mantenir una acidesa elevada, un aspecte remarcable si es compara amb la major part de varietats minorit\u00e0ries. D\u2019altra banda, t\u00e9 un grau alcoh\u00f2lic de 12\u00ba aproximadament i un contingut baix de fracci\u00f3 fen\u00f2lica, a causa de l\u2019escassa pres\u00e8ncia d\u2019antocians a la pell.<\/p>\n<p><a href=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac.jpg\"><img decoding=\"async\" class=\"aligncenter size-medium wp-image-18366\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-300x210.jpg\" alt=\"varietat-escursac\" width=\"300\" height=\"210\" srcset=\"https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-300x210.jpg 300w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-768x538.jpg 768w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-1024x718.jpg 1024w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-71x50.jpg 71w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-650x456.jpg 650w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac-1000x701.jpg 1000w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/11\/varietat-escursac.jpg 1728w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nQuant a la vinificaci\u00f3, presenta un gran potencial arom\u00e0tic i una bona capa de color: \u00e9s un vi intens, de tonalitat grana, reflexes porpres i perfil arom\u00e0tic afruitat, en qu\u00e8 es distingeixen fruita madura i fruites del bosc; d\u2019aroma vegetal, punt fresc, fruits vermells i acidesa suficient. En boca presenta una entrada suau, amb un pas de boca llarg, i mant\u00e9 molt de volum. Es recomana el pas per b\u00f3ta perqu\u00e8 no es redueixi.<\/p>\n<p><strong>Pagaments en reconversi\u00f3 i reestructuraci\u00f3 de vinya<\/strong><br \/>\nPer altra banda, durant els mesos de setembre i octubre de 2016 el Fons de Garantia Agr\u00e0ria i Pesquera de les Illes Balears (FOGAIBA) ha pagat un total de 556.627\u00a0\u20ac de l\u2019exercici de 2016 (15\/10\/2015 \u201315\/10\/2016), quantia que representa un increment del 153\u00a0% respecte de la despesa de l\u2019exercici anterior.<br \/>\nLa bona situaci\u00f3 que viu el sector contribueix que els viticultors es mostrin molt actius pel que fa a les millores a les explotacions, i per aquest motiu els expedients de sol\u00b7licituds d\u2019ajuda s\u2019han incrementat considerablement.<br \/>\nAquestes ajudes, que estan finan\u00e7ades pel Fons Europeu Agr\u00edcola de Garantia (FEAGA) de l\u2019Organitzaci\u00f3 Comuna de Mercats (OCM) del vi, van destinades a viticultors les vinyes dels quals es destinin a la producci\u00f3 de ra\u00efm per a vinificaci\u00f3.
