{"id":70133,"date":"2016-07-07T00:53:29","date_gmt":"2016-07-06T22:53:29","guid":{"rendered":"https:\/\/gastronomicament.cat\/igor-rodriguez-guanya-el-campionat-despanya-de-tapes-marineres-2016"},"modified":"2022-04-09T10:50:32","modified_gmt":"2022-04-09T08:50:32","slug":"igor-rodriguez-guanya-el-campionat-despanya-de-tapes-marineres-2016","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/de\/igor-rodriguez-guanya-el-campionat-despanya-de-tapes-marineres-2016","title":{"rendered":"Igor Rodr\u00edguez guanya el Campionat d&#8217;Espanya de Tapes Marineres 2016"},"content":{"rendered":"<p>El cuiner basc resident a Mallorca, Igor Rodr\u00edguez, s&#8217;ha fet amb el primer premi en el Campionat d&#8217;Espanya de Tapes Marineres 2016 &#8218;Noja, la mar de tapes&#8216;, celebrat aquest dissabte a Cant\u00e0bria.<\/p>\n<p>Promogut per l&#8217;Ajuntament de la Vila de Noja sota la direcci\u00f3 t\u00e8cnica de Gastronomicom, el certamen ha comptat amb sis finalistes procedents de diferents comunitats aut\u00f2nomes de l&#8217;Estat, entre els quals es trobava el xef del restaurant Bite del Portitxol (Palma). Amb el seu &#8218;Castanyoleta de mar&#8216;, Igor s&#8217;ha imposat a cinc prestigiosos xefs seleccionats pel comit\u00e8 del jurat, en qu\u00e8 van intervenir cuiners i cronistes gastron\u00f2mics, entre m\u00e9s de mig centenar candidats de totes les comunitats aut\u00f2nomes del pa\u00eds.<\/p>\n<p>La final ha tingut lloc al Palau del Marqu\u00e8s de Albaic\u00edn i durant una hora els participants elaboraren les seves propostes de tapes d&#8217;autor. Totes havien d&#8217;estar relacionades amb el mar i ser preparades en 20 minuts, temps que no va superar cap dels concursants. A m\u00e9s, havien de servir-se en format de tapes, pinxos, broquetes o similars, per menjar en una o dues mossegades.<\/p>\n<p>Igor Rodr\u00edguez, representant de les Illes Balears, va tenir com a contrincants als cuiners Juan Pere, de Lizarran, de Reus (Tarragona); Enrique P\u00e9rez, de les Quadres del Cam\u00ed Reial, de Selores (Cant\u00e0bria); M\u00f2nica Lloro, de Arriero Tapas, de Sorzano (la Rioja); David Rodr\u00edguez, de Danako Jatetxea, d&#8217;Irun (Pa\u00eds Basc) i Bruno M\u00e9ndez, de Quince Nudos, de Ribadesella (Ast\u00faries).<\/p>\n<p>Despr\u00e9s del recompte estricte dels vots del jurat, en pres\u00e8ncia del batle de Noja, Miguel \u00c1ngel Ruiz, el xef Igor Rodr\u00edguez Sanz, del restaurant Bite de Palma\u00a0va ser proclamar vencedor del concurs, amb la tapa Castanyoleta de Mar, i va obtenir un premi de 3.000 euros, un diploma acreditatiu i un trofeu art\u00edstic.<\/p>\n<p>El jurat de la final ha estat integrat pel director del Concurs nacional de Tapes i cronista gastron\u00f2mic, Luis Cepeda; la gastr\u00f2noma i experta en gastronomia, en\u00f2loga i directora de &#8218;G de Gastronomia, Carmen Ordiz; el periodista, tastador i cr\u00edtic gastron\u00f2mic, Jonatan Armengol; Jes\u00fas S\u00e1nchez, xef del c\u00e8lebre restaurant Glorieta de Am\u00f3s de Cant\u00e0bria i al gurmet i comunicador, Juanjo Mart\u00ednez. Tots ells han valorat a l&#8217;hora de votar factors com l&#8217;enginy, l&#8217;escenificaci\u00f3, l&#8217;harmonia, el sabor i la sensaci\u00f3 global de les creacions presentades.<\/p>\n<p style=\"text-align: center;\">\u00a0<a href=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma.jpg\"><img decoding=\"async\" class=\" wp-image-17805 aligncenter\" style=\"margin-top: 0px; margin-bottom: 0px;\" title=\"Castenyeta Igor Rodriguez Bite Restaurant Palma\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma-300x200.jpg\" alt=\"\" height=\"300\" srcset=\"https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma-300x200.jpg 300w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma-768x512.jpg 768w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma-75x50.jpg 75w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma-650x434.jpg 650w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2016\/07\/castenyeta-igor-rodriguez-bite-restaurant-palma.jpg 835w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>La premiada castanyoleta<\/strong><br \/>\nEl artifici d&#8217;Igor Rodr\u00edguez &#8218;Castanyoleta de mar&#8216;, que ja es va al\u00e7ar en 2015 amb el premi Tapalma d&#8217;Or al certamen celebrat a la capital balear, consisteix en un ravioli semil\u00edquid de musclos en escabetx elaborat amb gel de llima i menta, amanida d&#8217;algues i confitura de pebre vermell i recobert per una closca elaborada amb massa <em>cracker<\/em> tenyida de tinta de calamar, que va resultar guanyador de l&#8217;or en la passada edici\u00f3 del certamen de tapes i pintxos Tapalma, i que ha estat la tapa escollida per representar les Illes Balears en el concurs nacional de tapes marineres, quedant primer entre les cinc propostes que s&#8217;han presentat de les Illes per al certamen.<\/p>\n<p>La sorprenent explosi\u00f3 de sabors i textures de la &#8218;Castanyoleta de Mar&#8216;, ha sedu\u00eft en aquesta ocasi\u00f3 al jurat del Campionat Nacional de Tapes Marineres de Noja 2016.<\/p>\n<p><strong>D&#8217;Igor Rodr\u00edguez<\/strong><br \/>\n(Guip\u00fascoa, 16 setembre de 1977)<br \/>\nDespr\u00e9s de cursar estudis a l&#8217;Escola de Cuina de Miracruz, Sant Sebasti\u00e0, Igor Rodr\u00edguez va aterrar a Palma el 1996 per fer una estada al restaurant Koldo Royo (en aquell temps estrella Michelin). Des de llavors, va ocupar el c\u00e0rrec de segon de cuina als restaurants Bah\u00edaMediterranio, Porto Pi i Tahini. El 2006 va obrir, al barri palmes\u00e0 de Santa Catalina, el seu propi restaurant, Ummo, on va engrandir el terme &#8218;tapa&#8216;, Posteriorment va ser fitxat pel restaurant Bite del Portitxol, on continua avui com a xef executiu. Des d&#8217;all\u00e0, l&#8217;anomenat geni del pintxo ha sumat a la seva carrera nombrosos premis i reconeixements. A m\u00e9s de guanyar diversos Tapalma d&#8217;or, Igor Rodr\u00edguez va ser subcampi\u00f3 en el Concurs Nacional de Tapes i Pinxos de Valladolid 2013 i es va situar entre els deu millors creadors de punxes d&#8217;Espanya en el mateix certamen en 2015.<\/p>\n<p>En l&#8217;actualitat, Igor Rodr\u00edguez compagina els fogons de Bite amb diverses iniciatives gastron\u00f2miques que se celebren dins i fora de l&#8217;illa. Entre elles, ha participat en congr\u00e9s Minimal de cuina en miniatura, a Madrid Fusi\u00f3 o en miniature, celebrat a Murgia, com tamb\u00e9 en la Trobada Gastron\u00f2mica Internacional de Tomelloso. Tamb\u00e9 \u00e9s habitual veure&#8217;l donant suport a iniciatives de car\u00e0cter solidari, com ho va fer fa poc amb el Projecte Home Balears i Restauraci\u00f3 Mallorca.<br \/>\nDes de la cuina de Bite, Igor \u00e9s conegut per traslladar amb mestria i originalitat els productes frescos de temporada -molts d&#8217;ells procedents de la finca ecol\u00f2gica Ca&#8217;n Morey (Pollen\u00e7a)- als seus plats, suggerents mossegades en miniatura que no deixen a ning\u00fa indiferent. Membre de Chefsin, col\u00b7labora regularment en diferents accions gastron\u00f2miques formatives o divulgatives i comparteix fogons amb altres reconeguts xefs de les Illes Balears.
