{"id":70143,"date":"2016-07-01T01:09:01","date_gmt":"2016-06-30T23:09:01","guid":{"rendered":"https:\/\/gastronomicament.cat\/maridatge-amb-vins-el-cep-amb-miquel-vicens-i-tomeu-arbona"},"modified":"2022-04-09T10:50:37","modified_gmt":"2022-04-09T08:50:37","slug":"maridatge-amb-vins-el-cep-amb-miquel-vicens-i-tomeu-arbona","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/de\/maridatge-amb-vins-el-cep-amb-miquel-vicens-i-tomeu-arbona","title":{"rendered":"Maridatge amb Vins el Cep amb Miquel Vicens i Tomeu Arbona"},"content":{"rendered":"<p>L&#8217;\u00e0tic del <strong><a title=\"Nakar hotel Palma\" href=\"www.nakarhotel.com\/\" target=\"_blank\" rel=\"noopener\">Nakar hotel de Palma<\/a><\/strong> va acollir, diecres 29 de juny, un maridatge amb <strong><a title=\"Vins el Cep\" href=\"http:\/\/www.vinselcep.com\/\">Vins el Cep<\/a><\/strong> i els plats de Miquel Vicens (restaurants <a title=\"Restaurant Can Calent\" href=\"http:\/\/gastronomicament.cat\/restaurant-can-calent-de-campos\" target=\"_blank\" rel=\"noopener\">Can Calent<\/a> i <a title=\"Restaurant Cuit Palma\" href=\"www.facebook.com\/CuitRestaurant\" target=\"_blank\" rel=\"noopener\">Cuit<\/a>) i Tomeu Arbona (<a title=\"Fornet de la Soca Palma\" href=\"http:\/\/gastronomicament.cat\/fornet-de-la-soca\" target=\"_blank\" rel=\"noopener\">Fornet de la Soca<\/a>).<\/p>\n<p><strong>Maite Esteve<\/strong>, directora del celler de Sant Sadurn\u00ed d&#8217;Anoia don\u00e0 a tastar i explic\u00e0 6 vins. Per acompanyar-los, <strong>Miquel <em>Calent<\/em><\/strong> va cuinar 3 especialitats com el foie marinat amb sobrassada i confitura de pinyol d&#8217;albercoc, un arr\u00f2s de figueral (amb bacall\u00e0 i arengada) i xocolates; mentre que <strong>Tomeu Arbona<\/strong> prepar\u00e0 receptes conventuals com la magrana d&#8217;alberg\u00ednia i poma (de fra Jaume Mart\u00ed, del segle XVIII), l&#8217;escabetx de tonyina amb peres de Sant Joan (recepta del convent de Santa Clara de Palma) i el pastel\u00f3 de moll.<\/p>\n<p>Vins el Cep \u00e9s un celler format per les terres de 4 fam\u00edlies, al cor del Pened\u00e9s. Aquestes terres cultiven el ra\u00efm des del 1448 i ocupen un total de 200 hect\u00e0res. Estan especialitzats en caves i vins blancs, tot i que no hi falta el vi negre i el cava rosat. Els vins que es tastaren foren:<\/p>\n<ul>\n<li><strong>Pinot Noir 2013<\/strong>: Brut Reserva, fet 100% amb pinot noir. Un cava sofisticat. La varietat de ra\u00efm pinot noir aporta complexitat i frescor.<\/li>\n<li><strong>Clot del Roure 2014<\/strong>: vi ecol\u00f2gic, seguint els principis de l&#8217;agricultura biodin\u00e0mica, de la varietat xarel\u00b7lo. Fermentaci\u00f3 en barrica, vi de terrer de les vinyes velles.<\/li>\n<li><strong>4 Heretats 2011<\/strong>: Brut Nature Gran Reserva, fet amb xarel\u00b7lo, macabeu, parellada i chardonnay. El reflex de les quatre heretats del celler. Personalitat i eleg\u00e0ncia. 4 terrers i 4 varietats de ra\u00efm.<\/li>\n<li><strong>Claror 2011<\/strong>: Brut Nature Gran Reserva, fet amb xarel\u00b7lo, macabeu i parellada. El primer cava elaborat amb els principis de l&#8217;agricultura biodin\u00e0mica. Representa la m\u00e0xima expressi\u00f3 del terrer.<\/li>\n<li><strong>GR5 Senders Xarel\u00b7lo 2015<\/strong>: Vi monovarietal ecol\u00f2gic xarel\u00b7lo, de les vinyes velles. \u00c9s un vi fi i elegant que copsa la identitat del terrer.<\/li>\n<li><strong>MIM Natura 2013<\/strong>: Brut reserva ecol\u00f2gic fet amb xarel\u00b7lo, macabeu, parellada i chardonnay. Compta amb el segell ecol\u00f2gic europeu i nord-americ\u00e0. Est\u00e0 fet de les vinyes velles.
