{"id":70518,"date":"2015-11-12T18:50:54","date_gmt":"2015-11-12T17:50:54","guid":{"rendered":"https:\/\/gastronomicament.cat\/la-tapa-digor-rodriguez-entre-les-deu-millors-despanya"},"modified":"2015-11-12T18:50:54","modified_gmt":"2015-11-12T17:50:54","slug":"la-tapa-digor-rodriguez-entre-les-deu-millors-despanya","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/de\/la-tapa-digor-rodriguez-entre-les-deu-millors-despanya","title":{"rendered":"La tapa d&#8217;Igor Rodr\u00edguez, entre les deu millors d&#8217;Espanya"},"content":{"rendered":"<figure style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2014\/05\/porc-iber-eco-tapa-igor-rodriguez-restaurant-bite-portitxol.jpg\"><img decoding=\"async\" class=\" \" style=\"margin: 7px;\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2014\/05\/porc-iber-eco-tapa-igor-rodriguez-restaurant-bite-portitxol.jpg\" alt=\"\" width=\"300\" height=\"199\" \/><\/a><figcaption class=\"wp-caption-text\">La tapa d&#39;Igor Rodr\u00edguez al concurs de Valladolid.<\/figcaption><\/figure>\n<p>El &#8218;Porc Iber &#8230; eco&#8216;, la proposta del cap de cuina del restaurant Bite, Igor Rodr\u00edguez Sanz, vencedor de Tapalma 2015 i guanyador de sis edicions del certamen, ha resultat elegida com la novena millor tapa d&#8217;Espanya en el XI Concurs Nacional de Pinxos i Tapes Ciutat de Valladolid, el jurat ha estat presidit pel xef de Casa Marcial i dues estrelles Michelin, Nacho Manzano.<\/p>\n<p>El primer premi d&#8217;aquesta edici\u00f3 ha estat per a la tapa &#8218;Lechazo Taj Mahal&#8216;, d&#8217;Isabel Gonz\u00e1lez Gonz\u00e1lez, xef del restaurant Don Bacalao de Valladolid, de la qual el jurat ha valorat &#8222;la tradici\u00f3 en la utilitzaci\u00f3 del producte i l&#8217;aud\u00e0cia en els matisos cosmopolites &#8222;.<\/p>\n<p>Apadrinat per tercer any pel restaurant de Valladolid Montell\u00e9n, que regenta Cecilia Mateo, el tamb\u00e9 subcampi\u00f3 d&#8217;aquest concurs nacional el 2013, Igor Rodr\u00edguez, ha competit amb altres 47 cuiners procedents de tot Espanya, entre els quals es trobaven, enguany, altres tres professionals de Mallorca: Miguel Burgos, xef del restaurant Rocamar; Acis Villalobos, de Savor, i Francisco Javier Bustillo, de Son Floriana.<\/p>\n<p>Rodr\u00edguez, m\u00e0xim guanyador del concurs Tapalma, ha participat enguany amb panet de pa bao elaborat amb antigues farines de Mallorca farcit de careta de porc ib\u00e8ric, amb sobrassada i mel mallorquines, formatge Mah\u00f3n-Menorca, poma i menta, que ha batejat &#8218;Porc Iber &#8230; eco&#8216;.<\/p>\n<p><strong>Els altres premiats d&#8217;aquesta edici\u00f3 del concurs de Valladolid<\/strong><br \/>\nEls subcampions d&#8217;enguany s\u00f3n Jos\u00e9 Luque Torres, del restaurant The Westin Palace de Madrid i Antonio Gonz\u00e1lez Garc\u00eda, del restaurant Los Zagales de Valladolid. A m\u00e9s, han estat reconeguts els seg\u00fcents professionals, establiments i tapes participants:<\/p>\n<ul>\n<li><strong>Tapa M\u00e9s Tradicional<\/strong>: Luis Antonio Carcas Armingol, del restaurant Casa Pedro, de Saragossa (Arag\u00f3) per la seva tapa &#8222;Canel\u00f3 de pintada, trompeta negra i salsa de boletus&#8220;.<\/li>\n<li><strong>Tapa M\u00e9s Avantguardista<\/strong>: Jes\u00fas \u00cd\u00f1igo Luri, del restaurant \u00c1baco, de Huarte- Pamplona (Navarra) per la seva tapa &#8222;Street Food&#8220;.<\/li>\n<li><strong>Millor Concepte de Tapa<\/strong>: Pepe Ron Linde, del restaurant Blanco de Cangas del Narcea (Ast\u00faries), per la seva tapa &#8222;Raya 2015&#8220;.<\/li>\n<\/ul>\n<p>En aquesta edici\u00f3 s&#8217;ha atorgat per primer cop un premi de l&#8217;Organitzaci\u00f3 Interprofessional de l&#8217;Oli d&#8217;Oliva espanyol per l&#8217;\u00fas m\u00e9s oport\u00fa es i rellevant d&#8217;aquest producte en l&#8217;elaboraci\u00f3 d&#8217;una tapa. En aquesta nova categoria se li ha atorgat el premi a M\u00f2nica Lloro Romero, del restaurant Arriero Tapas, de Sorzano (La Rioja), per la seva &#8222;Bifana Macau&#8220;.<\/p>\n<p><strong>El jurat<\/strong><br \/>\nAl costat de Nacho Manzano, han integrat el jurat d&#8217;aquest certamen nacional el cuiner Javier Pe\u00f1a, exparticipant del programa Top Xef; Jes\u00fas Santamar\u00eda, director executiu i gastron\u00f2mic del Grup Bokado i Teresa Guti\u00e9rrez, propiet\u00e0ria del restaurant Azafr\u00e1n i tamb\u00e9 ex articipant de Top Xef; al costat dels nou jurats alternatius de les tres sessions del concurs, que s&#8217;ha desenvolupat davant d&#8217;una gran expectaci\u00f3 entre el 9 i el 11 de novembre a la C\u00fapula del Mil\u00b7lenni de
