En Miquel \u00c0ngel Barrios l&#8217;ha estudiada i ens la presenta en el interessant llibre &#8218;Les cuineres de Binissalem&#8216;.<\/em><\/p>\n<p><strong>Com un llonguet (una persona nascuda a Palma) com tu s&#8217;apassiona per la cuina de Binissalem?<\/strong><br \/>\nS\u00f3c un orgull\u00f3s llonguet, amant de la meva ciutat, per\u00f2 obert al m\u00f3n. Visc amb ma fam\u00edlia a Binissalem des de fa dotze anys (de fet els meus fills s\u00f3n binissalemers i fan l\u2019\u00e8 tan caracter\u00edstica del poble) i ja saps que el refrany diu que un \u00e9s d\u2019on est\u00e0 i no d\u2019on ha nascut. Me sent binissalemer orgull\u00f3s de ser-ho perqu\u00e8 la meva fam\u00edlia s\u2019hi ha integrat i el poble ens va acollir d\u2019all\u00f2 m\u00e9s b\u00e9. Binissalem \u00e9s per enamorar-se: per l\u2019arquitectura, el moviment cultural que l\u2019envolta, la seva hist\u00f2ria, la seva gent, el vi&#8230;i per la seva cuina. Con\u00e8ixer i estimar un lloc, fora con\u00e8ixer i estimar-ne la seva gastronomia, \u00e9s del tot impossible.<\/p>\n<p><strong>El llibre, \u00e9s un homenatge a alguna cuinera en concret?<\/strong> <img loading=\"lazy\" decoding=\"async\" class=\"alignright\" style=\"margin: 8px;\" title=\"Les Cuineres de Binissalem\" src=\"http:\/\/gastronomicament.cat\/wp-content\/uploads\/2013\/08\/Les-cuineres-de-Binissalem.jpg\" alt=\"\" width=\"270\" height=\"350\" \/><br \/>\nNo exactament, malgrat ara n\u2019\u00e9s un homenatge a totes. Vaig comen\u00e7ar volent fer una novel\u00b7la ambientada en el Binissalem d\u2019un temps, per\u00f2 va esdevenir un llibre de cuina a trav\u00e9s del qual un pot llegir bocins d\u2019hist\u00f2ria del poble, hist\u00f2ria de les receptes, les receptes i variants de les diferents cases, aix\u00ed com llegir com es vivia en el Binissalem de fa tres i quatre generacions i com ha evolucionat tot fins arribar a avui. Com hem baratat la xemeneia pel microones i la xeremia per l\u2019iPod.<\/p>\n<p><strong>Qu\u00e8 t\u00e9 de diferent la cuina binissalemera de la resta de la de Mallorca?<\/strong><br \/>\nLa cuina de Binissalem \u00e9s una cuina de subsist\u00e8ncia i molt contundent. Subsist\u00e8ncia perqu\u00e8 a Binissalem hi va haver gana a moltes cases, tanta sort de les finquetes i els seus horts! Ve d\u2019una \u00e8poca on res es tirava i hi havia gent que es llogava per un porc en l\u2019any. El rebost era la millor botiga i les estacions, la meteorologia i els oficis religiosos marcaven qu\u00e8 es podia menjar i qu\u00e8 no. Contundent pel qu\u00e8 fa a les calories, perqu\u00e8 la feina a les canteres de pedra, a les vinyes&#8230;etc demanaven for\u00e7a pel cos per a poder aguantar les jornades de forta tasca. I tamb\u00e9 contundent per la defensiva manera d\u2019emprar el coent a molts plats.<\/p>\n<p><strong>Quin \u00e9s el plat m\u00e9s caracter\u00edstic de la cuina binissalemera?<\/strong><br \/>\nN\u2019hi ha tres de propis: els bessons ofegats (favetes tendres cuinades amb grells, ceba, magre de porc, botifarr\u00f3&#8230;etc). Fideus de vermar (fideus t\u00edpics de les festes de la verema, a finals de setembre, fets amb ovella o xot novell, amb un puntet de coent interessant) i arr\u00f2s amb salseta (magre, fetge de porc i tallades de xulla de la ventresca cuinades amb un arr\u00f2s de brou).<\/p>\n<p><strong>I quin \u00e9s el que m\u00e9s t&#8217;agrada?<\/strong><br \/>\nPel fet de fer poble, perqu\u00e8 \u00e9s festa gran a Binissalem, pel ritual que l\u2019envolta i el fet de compartir-lo a taula amb els amics i ve\u00efnats en un dia molt especial en qu\u00e8 fem un \u201csopar a la fresca\u201d, els fideus des vermar.<\/p>\n<p><strong>Qu\u00e8 trobam al llibre?<\/strong><br \/>\nM\u00e9s de 250 receptes de cuina del dia a dia, bocins de tradici\u00f3 i, sobretot, la transcripci\u00f3 de les hores i hores de conversa amb totes les cuineres que hi han participat aquests dos anys, mentre cuinava els plats amb elles. Al final, trobareu un cant a la dona an\u00f2nima com a sostenidora de la fam\u00edlia i l\u2019economia familiar. Un cant a les qu\u00e8 s\u00f3n capaces de fer el miracle diari de transformar part de l\u2019hort i el rebost en els millors plats de cuina, aquells que ens tornaran a la boca i la mem\u00f2ria remors d\u2019un temps passat.<\/p>\n<p><strong>Amb qui m\u00e9s has comptat per fer l&#8217;obra?<\/strong><br \/>\nEl llibre no duu fotografies de les receptes perqu\u00e8 vaig tenir en compte el cost final de l\u2019edici\u00f3 i m\u00e9s enll\u00e0 dels 15 \u20ac de PVP que costa, ho trobava massa pel moment econ\u00f2mic que estem passant. El fet de ser el llibre m\u00e9s venut de no ficci\u00f3 en catal\u00e0 a les Illes, n\u2019\u00e9s una bona resposta a si la decisi\u00f3 fou encertada. L\u2019altra, perqu\u00e8 el llibre defensa que la manera que t\u00e9 cadasc\u00fa de fer el plat \u00e9s la bona i no volia donar pistes sobre el resultat final. De totes maneres, la maquetaci\u00f3 interior de Biel Palmer \u2013dissenyador gr\u00e0fic de Digital Point\u2013 \u00e9s molt original i diferent respecte del qu\u00e8 s\u2019havia fet fins ara.<br \/>\nTamb\u00e9 he de dir que la foto de portada \u00e9s obra i regal de Nando Esteva (Palma, 1979), actualment el millor fot\u00f2graf de fotografia publicit\u00e0ria d\u2019Europa i dels cinc millors a nivell mundial.<\/p>\n<blockquote><p>&#8222;EL LLIBRE &#8218;LES CUINERES DE BINISSALEM&#8216; HA ESTAT EL LLIBRE DE NO FICCI\u00d3 EN CATAL\u00c0 M\u00c9S VENUT A LES ILLES BALEARS&#8220;<\/p><\/blockquote>\n<p><strong>Has recorregut moltes ciutats i pa\u00efsos del m\u00f3n, aquests viatges t&#8217;han fet apreciar la cuina de Mallorca?<\/strong><br \/>\nEl m\u00f3n \u00e9s gegant, preci\u00f3s i a cada rac\u00f3 hi ha coses fant\u00e0stiques i diferents. Ara b\u00e9, el fet d\u2019estar lluny de casa voltant \u00c0sia, Orient Mitj\u00e0 i Am\u00e8rica durant catorze anys fa que aterrar a \u201csa roqueta\u201d et faci apreciar all\u00f2 que sents com a propi pel fet d\u2019haver viscut sempre aqu\u00ed.<\/p>\n<p><strong>Segons hem pogut saber est\u00e0s treballant en l&#8217;obra <em>Coques dolces i salades<\/em>. Quan el podrem tenir a les llibreries?<\/strong><br \/>\n<em>Coques dolces i salades<\/em>\u00a0\u00e9s un projecte molt m\u00e9s ambici\u00f3s que <em>Les cuineres de Binissalem<\/em>. Hi col\u00b7labora l\u2019Escola d\u2019Hosteleria de les Illes Balears (EHIB) amb Jos\u00e9 Luis Mateos al front, que et fa sempre la vida m\u00e9s f\u00e0cil. Poder executar plats amb professionals com els de l\u2019Escola i tenir acc\u00e9s als seus registres de receptes \u00e9s, per a tots els qui estimam la cuina, tot un luxe. A m\u00e9s a m\u00e9s, hi participen els millors cuiners de les Illes: Santi Taura, Macarena de Castro, Andreu Genestra&#8230;etc, tot aportant una recepta de coca dol\u00e7a i una altra de salada. I per si no fos suficient, per primera vegada hi participaran dos blogaires de cuina \u2013n\u2019Ana M\u00e9ndez i en Manu Ruiz\u2013 que aporten unes receptes dolces i salades que seran una vertadera sorpresa per a tots els lectors.<\/p>\n<p>Aquesta vegada s\u00ed que hi haur\u00e0 fotografies d\u2019algunes de les coques dolces i salades, amb un toc org\u00e0nic a l\u2019hora d\u2019ambientar-les.
