{"id":75623,"date":"2022-04-26T10:32:15","date_gmt":"2022-04-26T08:32:15","guid":{"rendered":"https:\/\/gastronomicament.cat\/un-estudi-alerta-sobre-limpacte-ambiental-de-les-conserves-de-tonyina"},"modified":"2022-04-26T10:32:15","modified_gmt":"2022-04-26T08:32:15","slug":"un-estudi-alerta-sobre-limpacte-ambiental-de-les-conserves-de-tonyina","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/de\/un-estudi-alerta-sobre-limpacte-ambiental-de-les-conserves-de-tonyina","title":{"rendered":"Un estudi alerta sobre l&#8217;impacte ambiental de les conserves de tonyina"},"content":{"rendered":"<p>La Universitat de les Illes Balears (UIB) i l\u2019Institut Espanyol d\u2019Oceanografia (IEO, CSIC), en col\u00b7laboraci\u00f3 amb l\u2019African Marine Expertise de la Costa d\u2019Ivori i l\u2019associaci\u00f3 cient\u00edfica Alimentta, han publicat un informe sobre les implicacions econ\u00f2miques, socials i mediambientals que tenen les conserves de tonyina.<\/p>\n<p>Aquest estudi aprofundeix en<strong>\u00a0la pesca de les tonyines tropicals i el llarg viatge que fan fins que s\u00f3n processades i consumides a qualsevol lloc del m\u00f3n<\/strong>. &#8222;El sistema alimentari est\u00e0 de cada vegada m\u00e9s deslocalitzat i internacionalitzat, i la conserva de tonyina no n\u2019\u00e9s una excepci\u00f3&#8220;, explica\u00a0<strong>Patricia Reglero<\/strong>, investigadora del Centre Oceanogr\u00e0fic de les Balears de l\u2019IEO i responsable de Planet Tuna. &#8222;Una de les principals dificultats que hem d\u2019afrontar \u00e9s que els consumidors no saben res del llarg viatge que fan les tonyines fins que arriben a les llaunes, la qual cosa dificulta la possibilitat de prendre decisions amb la informaci\u00f3 adequada i de manera responsable&#8220;, assenyala la cient\u00edfica.<\/p>\n<p>Probablement, quan una persona menja tonyina enllaunada a qualsevol lloc del m\u00f3n <strong>consumeix esp\u00e8cies diferents de t\u00fanids tropicals<\/strong>, i de vegades aix\u00f2 passa a causa de l\u2019escala global d\u2019aquesta ind\u00fastria. Les tonyines tropicals, en concret, la tonyina de ventre ratllat (<em>Katsuwonus pelamis<\/em>), la tonyina d\u2019aleta groga (<em>Thunnus albacares<\/em>) i la tonyina d\u2019ulls grossos (<em>Thunnus obesus<\/em>), s\u00f3n de les principals esp\u00e8cies marines en volum de pesca, sobretot la tonyina de ventre ratllat, que ocupa el tercer lloc. Aquestes esp\u00e8cies sustenten una gran ind\u00fastria global dedicada a l\u2019extracci\u00f3, la distribuci\u00f3, el processament i el consum. Destaca la posici\u00f3 d\u2019Espanya, que \u00e9s el productor principal de conserves de tonyina d\u2019Europa (64%) i se situa en el segon lloc del m\u00f3n, despr\u00e9s de Tail\u00e0ndia. El sector conserver espanyol \u00e9s divers i el constitueixen 640 empreses de tota classe: petites i mitjanes empreses i grans grups d\u2019alimentaci\u00f3.<\/p>\n<p><strong>Una normativa d\u2019etiquetatge mancada de regulaci\u00f3<br \/>\n<\/strong>A difer\u00e8ncia de l\u2019etiquetatge de la tonyina fresca,\u00a0<strong>la normativa \u00e9s m\u00e9s laxa pel que fa a la tonyina enllaunada<\/strong>. La directriu europea obliga a oferir informaci\u00f3 nutricional i la data de consum preferent, per\u00f2\u00a0<strong>eximeix de detallar-ne l\u2019esp\u00e8cie, la zona o la manera com es va pescar, informaci\u00f3 que permetria prendre decisions de consum m\u00e9s responsables<\/strong>. No obstant aix\u00f2, algunes empreses conserveres i distribu\u00efdores ofereixen m\u00e9s informaci\u00f3 que la que s\u2019exigeix legalment.<\/p>\n<p><strong>Una ind\u00fastria globalitzada i deslocalitzada<br \/>\n<\/strong>En total, al m\u00f3n hi ha registrats 678 grans tonyinaires d\u2019encerclament, 28 dels quals amb bandera espanyola. Aquests vaixells capturen els exemplars mitjan\u00e7ant xarxes d\u2019encerclament amb qu\u00e8 envolten els bancs de tonyines. La flota espanyola opera principalment a l\u2019Atl\u00e0ntic i a l\u2019\u00cdndic, i els principals ports de desembarcament s\u00f3n les Seychelles, a l\u2019\u00cdndic; la Costa d\u2019Ivori, el Senegal i Cap Verd, a l\u2019Atl\u00e0ntic; i l\u2019Equador, al Pac\u00edfic. Per\u00f2 no s\u00f3n els \u00fanics, ja que els darrers anys s\u2019hi han afegit m\u00e9s ports importants, com ara el de Madagascar i el de la Samoa Nord-americana, entre d\u2019altres.<\/p>\n<p><strong>Sobre l\u2019estat de conservaci\u00f3 de les esp\u00e8cies de tonyines<br \/>\n<\/strong>En general,<strong>\u00a0l\u2019estat de conservaci\u00f3 de les tonyines tropicals \u00e9s bo, excepte la tonyina d\u2019ulls grossos i la tonyina d\u2019aleta groga<\/strong>, ja que hi ha \u00e0rees on s\u2019han superat els nivells d\u2019explotaci\u00f3 m\u00e0xima sostenible. \u00c9s el cas de la tonyina d\u2019ulls grossos, a l\u2019Atl\u00e0ntic, o la tonyina d\u2019aleta groga, a l\u2019\u00cdndic, situacions que han estat contestades aplicant mesures per recuperar l\u2019estat de les poblacions.<\/p>\n<p>A pesar de la gesti\u00f3 que es fa de les esp\u00e8cies i de la monitoritzaci\u00f3 de la seva conservaci\u00f3, <strong>la informaci\u00f3 que arriba \u00e9s completament insuficient<\/strong>.
