{"id":79941,"date":"2022-12-07T23:57:13","date_gmt":"2022-12-07T22:57:13","guid":{"rendered":"https:\/\/gastronomicament.cat\/laviram-una-de-les-tradicions-mes-antigues-de-nadal"},"modified":"2022-12-07T23:57:13","modified_gmt":"2022-12-07T22:57:13","slug":"laviram-una-de-les-tradicions-mes-antigues-de-nadal","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/de\/laviram-una-de-les-tradicions-mes-antigues-de-nadal","title":{"rendered":"L&#8217;aviram, una de les tradicions m\u00e9s antigues de Nadal"},"content":{"rendered":"<p>Amb la proximitat de les festes de Nadal, quan als carrers ja s&#8217;encenen els llums, ens afanyem amb els preparatius de cada any: recuperem la decoraci\u00f3 de l&#8217;altell i adornem la casa, recorrem les paradetes de les fires de Nadal i en tornem amb un nou element que s\u2019afegir\u00e0 als guarniments\u2026 I som-hi!: les compres, les cartes als Reis d&#8217;Orient o al Pare Noel, l\u2019arribada del Ti\u00f3, les rifes\u2026 I com no, cistell o carro en m\u00e0 sortim a la cerca de les provisions per celebrar els dies assenyalats com millor sabem fer: al voltant de la taula, compartint amb les persones m\u00e9s properes el dinar m\u00e9s especial de l\u2019any.<\/p>\n<p>De\u00a0<strong>celebracions nadalenques<\/strong>\u00a0hi ha tantes com fam\u00edlies. Avui dia, cadasc\u00fa interpreta i viu la tradici\u00f3 a la seva manera i d\u2019acord amb els seus valors. Per\u00f2 pel que fa al dinar del dia de Nadal, les tradicions familiars acostumen a ser sagrades i, a moltes cases, l\u2019escudella i el rostit s\u00f3n preparats amb molta cura i rebuts amb gran expectaci\u00f3 de manera invariable, any rere any.<\/p>\n<p>La gastronomia \u00e9s sempre present a les nostres celebracions i, per Nadal, pren un paper molt destacat. Antigament, a les cases es reservaven els millors aliments i el millor vi per aquestes dates, i la carn m\u00e9s apreciada era la d\u2019aviram. Segons els estudiosos dels costums i tradicions catalanes,\u00a0<strong>l\u2019escudella i l\u2019olla de Nadal, on no pot faltar mai una bona porci\u00f3 de gallina, \u00e9s un plat tradicional sobretot de la zona central<\/strong>. En canvi, el plat principal ha estat gaireb\u00e9 a tot arreu el rostit de pollastre o de cap\u00f3. Amb el pas del temps, les aus farcides que antigament eren reservades a unes poques fam\u00edlies, han guanyat terreny i han substitu\u00eft el rostit original en algunes cases.<\/p>\n<p>La import\u00e0ncia de l\u2019aviram en la tradici\u00f3 nadalenca catalana queda patent amb la pres\u00e8ncia de\u00a0<strong>fires av\u00edcoles en el calendari de les fires de Nadal<\/strong>, com s\u00f3n la Fira Av\u00edcola de la Ra\u00e7a Prat que t\u00e9 lloc a El Prat de Llobregat, on es poden adquirir pollastres i capons de la ra\u00e7a Pota Blava i de la IGP (Indicaci\u00f3 Geogr\u00e0fica Protegida) Pollastre i Cap\u00f3 de la Ra\u00e7a Prat, i l\u2019antiqu\u00edssima Fira del Gall de Vilafranca del Pened\u00e8s, que es va originar a l\u2019edat mitjana i est\u00e0 dedicada al Gall del Pened\u00e8s, una varietat aut\u00f2ctona d\u2019au de corral que tamb\u00e9 compta amb la seva pr\u00f2pia IGP.<\/p>\n<p>Aquesta tradici\u00f3 av\u00edcola es nota tamb\u00e9 a les carnisseries i a les parades dels mercats, on es poden trobar varietats d\u2019aviram que es venen solament per aquestes dates. Els productors d\u2019aviram catalans proveeixen el mercat de pollastres, capons, galls dindis, \u00e0necs i altres aus, que s\u00f3n la mat\u00e8ria primera imprescindible per a elaborar el rostit de Nadal amb productes frescos, de proximitat i de la m\u00e0xima qualitat.<\/p>\n<p>Si sou dels qui rebeu la fam\u00edlia o els amics a casa el dia de Nadal, des de la Federaci\u00f3 Av\u00edcola Catalana (FAC) animem a mantenir la bonica tradici\u00f3 de cuinar aviram. Si feu el rostit a la cassola podeu triar un sol tipus d\u2019au, o b\u00e9 combinar diferents tipus d&#8217;aviram. Per seguir la tradici\u00f3,caldr\u00e0 fer-lo amb fruites dessecades com panses, prunes, orellanes i fins i tot castanyes, amb pinyons o altres fruits secs i amb un bon raig de vi ranci o de conyac. Si us agrada la vistositat de l\u2019au rostida sencera, demaneu consell al vostre establiment per a triar la varietat m\u00e9s adient segons els vostres gustos i el nombre de comensals.\u00a0<strong>L\u2019au que trieu, sigui un cap\u00f3, un pollastre o un gall dindi, farciu-la amb els mateixos ingredients del rostit, afegiu-hi pomes a trossos i herbes arom\u00e0tiques<\/strong>.
