Es tracta de Sa Tanqueta de Randa , \u00dcbeck, Arume Sake Bar i Bellaombra, que han estat triats pel jurat entre\u00a022 restaurants participants.<\/p>\n<p>La gran final se celebrar\u00e0 l&#8216;<strong>1 de mar\u00e7<\/strong>, a les\u00a0<strong>13 hores<\/strong>, en el marc de la Mostra de Cuina de les Illes Balears, a\u00a0<strong>sa Feixina de Palma<\/strong>. En aquesta darrera fase, els quatre restaurants finalistes presentaran davant del jurat les propostes, i es proclamar\u00e0 el guanyador del Premi del Jurat, amb un premi en met\u00e0l\u00b7lic dotat en 600 euros.<\/p>\n<p>Els plats que elaborar\u00e0 cada restaurant s\u00f3n:<\/p>\n<ul>\n<li>Costella de Porc Negre, patat\u00f3 i sobrassada en textures (Sa Tanqueta de Randa)<\/li>\n<li>Porc Negre (\u00dcbeck)<\/li>\n<li>Calamar i textures de sobrassada (Arume Sake Bar)<\/li>\n<li>S\u00edpia lacada en Sobrassada i vermut vermell, patat\u00f3 de sa Pobla i cruixent de pa de sopes i sobrassada (ellaombra)<\/li>\n<\/ul>\n<p>El jurat est\u00e0 compost per\u00a0<strong>Jos\u00e9 Cort\u00e9s<\/strong>, president del jurat i xef guardonat amb el Premi Ciutat de Palma de Gastronomia 2026;<strong>\u00a0Ant\u00f2nia Maria Torres<\/strong>, directora del jurat del Tast de Sobrassada de Mallorca;\u00a0<strong>Isabel Pedrosa<\/strong>, membre del panell de Tast de Sobrassada de Mallorca; i\u00a0<strong>Alfonso Robledo<\/strong>, president de la Federaci\u00f3 Empresarial de Restauraci\u00f3 de les Illes Balears (FERIB), un equip que aportar\u00e0 una mirada complement\u00e0ria entre l&#8217;experi\u00e8ncia gastron\u00f2mica i el criteri tecnicosensorial del producte emparat per la indicaci\u00f3 geogr\u00e0fica protegida.<\/p>\n<p>Aix\u00ed mateix, el certamen preveu, un Premi del P\u00fablic a trav\u00e9s de la plataforma de vot habilitada a la web de Sobrassada de Mallorca que s&#8217;anunciar\u00e0 el mateix dia de la final.\u00a0<strong>Andreu Palou<\/strong>, president del Consell Regulador IGP Sobrassada de Mallorca, assenyala que \u201cdes del Consell Regulador apostam decididament per treballar de la m\u00e0 amb els cuiners i amb el conjunt del sector de la restauraci\u00f3. A m\u00e9s, Palou hi afegeix que \u201caquestes sinergies s\u00f3n fonamentals per unir esfor\u00e7os i seguir donant protagonisme a la Sobrassada de Mallorca a les cuines de les Illes Balears\u201d.
