{"id":59196,"date":"2021-02-10T09:38:37","date_gmt":"2021-02-10T08:38:37","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/recepta-de-panacotta-de-llimona-i-maduixa"},"modified":"2021-02-10T09:38:37","modified_gmt":"2021-02-10T08:38:37","slug":"recepta-de-panacotta-de-llimona-i-maduixa","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/de\/recepta\/recepta-de-panacotta-de-llimona-i-maduixa","title":{"rendered":"Recepta de panacotta de llimona i maduixa"},"content":{"rendered":"<p><em>El cuiner Diego Dato, chef del restaurant Melvin, establiment assessorat per Mart\u00edn Berasategui a Tenerife, ofereix aquesta recepta de panacotta de llimona i maduixa per celebrar Sant Valent\u00ed.<\/em><\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>Per a la panacota:<\/p>\n<ul>\n<li>550 grams de nata<\/li>\n<li>85 grams de sucre<\/li>\n<li>1 fulla de gelatina<\/li>\n<li>La pell de 2 llimones<\/li>\n<\/ul>\n<p>Per al suc de maduixa:<\/p>\n<ul>\n<li>250 grams de maduixes fresques<\/li>\n<li>25 grams de sucre<\/li>\n<\/ul>\n<p>Per acabar:<\/p>\n<ul>\n<li>100 grams de maduixes fresques<\/li>\n<li>100 grams de suc de maduixes<\/li>\n<li>Fulles de menta<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<p><em>Per al suc de maduixa:<br \/>\n<\/em>Rentau i eixugau les maduixes, llevar-hi el peduncle, tallau-les per la meitat o en quarts, segons la mida de les maduixes, posau-les en un bol i afegiu-hi el sucre. Despr\u00e9s, cobriu-les amb film (embolcall de pl\u00e0sti) i feu-hi uns foradets amb una punta.<\/p>\n<p>A continuaci\u00f3, heu de coure les\u00a0maduixes al bany maria a foc baix durant 30 minuts. Quan hagi passat aquest temps, abocau les maduixes a un tam\u00eds i deixau-les esc\u00f3rrer b\u00e9 sense que s&#8217;aixafin.\u00a0Reservau-ne el suc obtingut i deixau\u00a0que es refredi.<\/p>\n<p><em>Per a la panacotta:<br \/>\n<\/em>Posau la crema de llet (nata) en un cass\u00f3 i feis que bulli. Despr\u00e9s, afegiu-hi la\u00a0pell de les llimones (sense la part blanca), cobriu-ho amb paper film i deixau-ho infusionar durant 30 minuts.<\/p>\n<p>Colau-ho i tornau-ho a esfalfar. Afegiu-hi el sucre i mesclau-lo perqu\u00e8 quedi ben dissolt.<\/p>\n<p>A continuaci\u00f3, afegiu-hi la gelatina pr\u00e8viament hidratada en aigua ben freda, quan la nata sigui t\u00e8bia, barrejau-ho tot amb t\u00farmix per obtenir una crema ben llisa. Despr\u00e9s, abocau la crema en els recipients que vulgueu usar i deixau-ho refrigerar com a m\u00ednim dues hores.<\/p>\n<p><em>Acabat i presentaci\u00f3:<br \/>\n<\/em>Tallau les maduixes a daus de 5 mm x 5 mm. Despr\u00e9s, mesclau el suc de les maduixes amb les maduixes a daus i abocau-ho amb cura sobre la\u00a0panacotta freda. Decorau-ho amb una fulla de menta i servir-la.<\/p>\n<p><em>Truc<\/em>:<br \/>\nS&#8217;ha d&#8217;utilitzar la quantitat justa de gelatina, anau alerta de no abusar-ne perqu\u00e8 si no ser\u00e0 massa el\u00e0stica, amb textura de cautx\u00fa.
