Sebasti\u00e0 Serra Socies, originari de sa Pobla i conegut com\u00a0<em>Tito<\/em>, el va obrir l&#8217;any 1976 amb la seva esposa, Joana Cort\u00e8s Moranta, nascuda a Palma. Magdalena Serra, la seva filla, segueix la recepta de son pare per fer aquests peus de porc.<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<p>Per a 8 persones<\/p>\n<ul>\n<li>8 peus de porc<\/li>\n<li>1 ceba<\/li>\n<li>1 tros de xulla de Porc Negre<\/li>\n<li>1 xori\u00e7o<\/li>\n<li>Oli d&#8217;oliva<\/li>\n<li>Aigua<\/li>\n<li>Sal<\/li>\n<li>Pebre bo<\/li>\n<li>2 pebres de cirereta<\/li>\n<li>2 tom\u00e0tigues de ramellet<\/li>\n<li>Julivert<\/li>\n<li>2 alls<\/li>\n<li>80 grams d&#8217;ametles\u00a0torrades<\/li>\n<li>Moraduix<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<p>Socarrau els peus de porc per llevar-los els pels i cerres, i els xapau en quatre bocins. Despr\u00e9s, posau a bullir en una olla devers dues hores i mitja.<\/p>\n<p>A part, posau oli dins una paella i quan estigui calent, afegiu-hi la xulla i el xori\u00e7o. Quan comencin\u00a0a fer-se, hi posau la ceba tallada ben petita, la sal, el pebre bo, dos pebres de cirereta i les tom\u00e0tigues ratllades. En estar cuinat, ho deixau\u00a0reposar.<\/p>\n<p>Quan els peus estiguin cuits (heu d&#8217;anar alerta que no es rompin), els posau dins una greixonera i en colau el brou. Despr\u00e9s, afegiu aquest brou fins que quasi quedin tapats, i el sofregit. Ho deixau\u00a0cuinar a foc mitj\u00e0 mentre preparau una picada d&#8217;all, julivert, ametlla\u00a0torrada i moraduix, que afegireu quan faltin dos minuts per servir el plat.<\/p>\n<p>Bon profit!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>El restaurant Can Tito es troba al Born del Molinar (Palma).
