{"id":60973,"date":"2020-05-07T11:48:31","date_gmt":"2020-05-07T09:48:31","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/com-fer-ceba-confitada"},"modified":"2022-04-09T09:40:13","modified_gmt":"2022-04-09T07:40:13","slug":"com-fer-ceba-confitada","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/de\/recepta\/com-fer-ceba-confitada","title":{"rendered":"Com fer ceba confitada"},"content":{"rendered":"<p>\u00c9s la meva intenci\u00f3 explicar-vos perqu\u00e8 ens serveix la ceba confitada a la cuina i com fer-la.<\/p>\n<p>Treballant a la cuina sempre teniem varies bases fetes amb anterioritat, per facilitar la preparaci\u00f3 del plat, sofregits, salses\u2026<\/p>\n<p>A casa, sempre o quasi sempre tinc, encara que menys, certa quantitat d\u2019aquestes bases, que quan es fan, com \u00e9s el cas d\u2019aquesta ceba, no val la pena posar-si per poca quantitat, jo el que faig \u00e9s fer-ne i congelar-la en diversos pots , per despr\u00e9s anar treient a mida que la necessito.<\/p>\n<p>Els que em seguiu habitualment, ja haureu pogut comprobar que hi \u00e9s en varies de les meves receptes.<\/p>\n<p><strong>Perqu\u00e8 serveix la ceba confitada?<\/strong><\/p>\n<p>Serveix per qualsevol sofregit, salsa, platillo, per acompanyar carn o peix. Millorant el resultat final del plat. Un sofregit senzill de ceba i tom\u00e0quet canvia i millora molt el seu sabor amb aquesta ceba.<\/p>\n<p>No hem de confondre aquesta ceba confitada amb la ceba caramel\u00b7litzada, que porta sucre.<\/p>\n<p><strong>Per\u00f2 comencem pel principi.\u00a0Que \u00e9s un confitat?<\/strong><\/p>\n<p>El confitat \u00e9s una t\u00e8cnica de cocci\u00f3 que consisteix en introduir el producte en oli abundant i cuore\u2019l a una temperatura m\u00e0xima d\u2019uns 80\u00ba, o sigui que no arribi a fregir-se i es vagi fent lentament, llogicament, cada producte necessitar\u00e0 el seu temps de cocci\u00f3, depenent tamb\u00e9 del tamany i la quantitat.<\/p>\n<p><strong>Com fem la ceba confitada?<\/strong><\/p>\n<p>En aquest cas hem utilitzat 3 kg. de ceba i aproximadament una mica m\u00e9s de\u00a0mig litre d\u2019oli d\u2019oliva verge. Ah! I no heu de patir per gastar molt d\u2019oli, val m\u00e9s que en sobri, perqu\u00e8 quan colem el contingut tindrem un oli de ceba fant\u00e0stic!<\/p>\n<p>En primer lloc tallem la ceba en juliana i la introduim en una cassola amb l\u2019oli i la posem a foc molt baixet (80\u00ba)<\/p>\n<p><a href=\"https:\/\/gastronomicament.cat\/wp-content\/uploads\/2020\/05\/Pas-1-Com-fer-ceba-confitada-De-plat-en-plat.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-26327\" src=\"https:\/\/gastronomicament.cat\/wp-content\/uploads\/2020\/05\/Pas-1-Com-fer-ceba-confitada-De-plat-en-plat.jpg\" alt=\"\" width=\"640\" height=\"421\" srcset=\"https:\/\/gastronomicament.cat\/wp-content\/uploads\/2020\/05\/Pas-1-Com-fer-ceba-confitada-De-plat-en-plat.jpg 640w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2020\/05\/Pas-1-Com-fer-ceba-confitada-De-plat-en-plat-300x197.jpg 300w, https:\/\/gastronomicament.cat\/wp-content\/uploads\/2020\/05\/Pas-1-Com-fer-ceba-confitada-De-plat-en-plat-76x50.jpg 76w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Deixem que vagi coent, \u00a0poc a poc\u2026\u2026<\/p>\n<p>Al cap d\u2019una estona la ceba haur\u00e0 deixat anar la seva aigua i la cassola ens quedar\u00e0 m\u00e9s o menys amb l\u2019oli cobrint completament la ceba. Fixeu-vos a la foto que nom\u00e9s es noten unes lleugeres bombolletes per la temperatura baixa a la que estem fent la ceba.
