En aquestes hi vaig afegir un fetge de rap que li don\u00e0 m\u00e9s gust de mar, igual que la melsa de la s\u00edpia. Si trobau que la bossa de tinta \u00e9s petita ser\u00e0 millor que n\u2019hi afegiu una mica m\u00e9s.<\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1 s\u00edpia bruta de 800 g aprox.<\/li>\n<li>1 ceba<\/li>\n<li>1 all<\/li>\n<li>1 fetge de rap (opcional)<\/li>\n<li>la tinta de la s\u00edpia<\/li>\n<li>4 g de tinta m\u00e9s<\/li>\n<li>1 l de llet<\/li>\n<li>160 g farina<\/li>\n<li>220 g mantega<\/li>\n<li>20 g oli oliva per a l\u2019arrebossat<\/li>\n<li>4 ous<\/li>\n<li>Galeta picada<\/li>\n<\/ul>\n<h4><strong>Elaboraci\u00f3<\/strong>:<\/h4>\n<p>Netejarem la s\u00edpia i guardarem la melsa i la tinta. Passarem la s\u00edpia, cap, melsa i cos per una paella procurant no coure-la en exc\u00e9s. La tallarem a trossos m\u00e9s petits o ens ajudarem d\u2019una picadora per\u00f2 sense picar-la massa. Ens interessa que tengui textura. Reservarem.<\/p>\n<p>Torrarem el fetge de rap i el picarem ben petit.<\/p>\n<p>Pelarem la ceba i els alls i els picarem amb l\u2019ajuda d\u2019una picadora fins que ens quedi una pasta. Fondrem la mantega amb l\u2019oli en una paella i quan sigui calenta hi courem la ceba. Quan sigui ben rossa hi afegirem la farina i la cuinarem uns minuts sense deixar de remenar. Abocarem la llet a poc a poc fins que tenguem una beixamel espessa.<\/p>\n<p>Quan la salsa es desferri de les parets de la paella ser\u00e0 senyal de que la tenim a punt. Hi afegirem la s\u00edpia i el fetge de rap, mesclarem b\u00e9 i hi posarem la tinta. Salpebrarem. Tornarem a mesclar i ho tendrem uns minuts al foc.<\/p>\n<p>Abocarem la pasta en un recipient i el taparem amb paper film a pell. Deixarem que reposi dins la gelera fins a l\u2019endem\u00e0.<\/p>\n<p>Per arrebossar les croquetes farem bolles de mida semblant, les passarem primer per ou batut i despr\u00e9s per la galeta picada. Les col\u00b7locarem en safates i les congelarem tapades de paper film.<\/p>\n<p>Llavors ja tendreu unes bon\u00edssimes croquetes per quan les vulgueu fer servir.
