A la mitjanit ve\u00efns i feligresos s\u2019apropaven a l\u2019esgl\u00e9sia i compartien amb els campaners fruits secs, galetes, dol\u00e7os i vi dol\u00e7. D\u2019aquest origen se n\u2019ha derivat a Catalunya la Castanyada, festa en la qual es consumeixen aquests dol\u00e7os anomenats panellets i les castanyes cuites a la brasa del carb\u00f3 o al forn.<\/p>\n<p>Actualment els panellets han esdevingut productes molt populars consumits per totes les classes socials. Ja el 1807, segons explica el Bar\u00f3 de Mald\u00e0, eren molt populars i es venien al carrer; antigament es venien panellets i castanyes en unes parades situades al carrer de l\u2019Hospital de Barcelona.<\/p>\n<p>Avui en dia els panellets es compren a la pastisseria o es fan a casa, i es fa una festa per gaudir en fam\u00edlia o amics d\u2019aquests productes de tardor. Tamb\u00e9 n\u2019hi ha que tenen la forma d\u2019un os d\u2019esquelet, una manera divertida de fer refer\u00e8ncia a la festivitat de Tots Sants o el dia dels difunts. En l\u2019actualitat s\u2019utilitzen altres productes m\u00e9s innovadors per fer els panellets com xocolata, taronja, festucs\u2026<\/p>\n<p>La base m\u00e9s caracter\u00edstica dels panellets \u00e9s una barreja d\u2019ametlles crues m\u00f2ltes i\u00a0sucre. Sovint, i perqu\u00e8 sigui m\u00e9s econ\u00f2mic, s\u2019hi afegeixen patates bullides (o moniatos bullits). Tots els tipus es couen al forn. Els m\u00e9s populars s\u00f3n els panellets de pinyons que estan fets de la base del panellet arrebossada de pinyons i envernissats de clara d\u2019ou.<\/p>\n<h4><\/h4>\n<h4>Recepta de panellets<\/h4>\n<p><strong>Com fem la massa?<\/strong><\/p>\n<p>La millor manera de totes i la m\u00e9s correcta \u00e9s fer la massa sense patata ni moniato, simplement amb l\u2019ametlla ratllada, el sucre i l\u2019aigua, perqu\u00e8 ens quedin com de pastisseria.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>750g de farina d\u2019ametlla<br \/>\n750g de sucre<br \/>\nPell ratllada d\u2019una llimona<br \/>\n150ml d\u2019aigua<\/p>\n<p><strong>Els altres ingredients:<\/strong><\/p>\n<p>200g de pinyons<br \/>\n200g de granet d\u2019ametlla<br \/>\nCaf\u00e8 soluble<br \/>\nXocolata<br \/>\nCoco ratllat<br \/>\nCodony<br \/>\n1 beina de vainilla<br \/>\nSucre en pols<br \/>\nRovell d\u2019ou<br \/>\nAlm\u00edvar (Podem utilitzar el de un pot de cireres, per exemple)<\/p>\n<p><strong>Preparaci\u00f3:<\/strong><\/p>\n<p><strong>Pel massap\u00e0 base:<br \/>\n<\/strong><\/p>\n<p>Barrejar l\u2019ametlla, el sucre i la ratlladura de llimona. Afegir l\u2019aigua i amassar b\u00e9 fins a obtenir un massap\u00e0 ben fi. Deixar a la nevera unes hores (fins i tot d\u2019un dia per l\u2019altre). Dividir el massap\u00e0 en tantes parts com gustos es vulguin fer.<\/p>\n<p>Ara b\u00e9, si no tenim prou tra\u00e7a o ens agrada \u00a0fer-los amb patata o moniato aquests s\u00f3n els ingredients:<\/p>\n<p><strong>Ingredients per fer la massa:<\/strong><\/p>\n<p>\u00bd kg. d\u2019ametlla picada<br \/>\n\u00bd kg. de sucre llustre (com farina)<br \/>\n150 grs de moniato o patata<br \/>\nratlladura d\u2019una llimona<\/p>\n<p>Es bullen els moniatos o les patates (segons el que haguem triat) durant uns 20 minuts (que quedin una mica tous), seguidament els pelem , els trossegem i xafem una mica i ho deixem refredar.<br \/>\nBarregem l\u2019ametlla picada molt fina, el sucre llustre i seguidament hi afegim els boniatos o patates\u00a0xafats, ho anirem amassant una estoneta fins que ens quedi una pasta lligada.<br \/>\nQuan la massa hagi agafat consist\u00e8ncia hi afegirem la ratlladura de la pela de la llimona. \u00c9s millor fer-la el dia abans i deixar reposar a la nevera embolicada amb un drap humit.<\/p>\n<p><strong>Com fem les diferents classes de panellets?\u00a0<\/strong><\/p>\n<p>Agafarem la massa i la dividirem en tantes parts com tipus de panellets volguem fer.<br \/>\nA cada part hi afegirem el que volguem, coco, caf\u00e8 soluble, cacau en pols\u2026<\/p>\n<p>\u00c9s l\u2019hora de fer boletes. Un cop fetes, en un vol, barregem els 200g de pinyons amb 20g de rovell d\u2019ou i 20g d\u2019alm\u00edvar \u00a0(amb l\u2019alm\u00edvar la barreja \u00e9s m\u00e9s enganxosa i els pinyons s\u2019adhereixen f\u00e0cilment).<br \/>\nPer arrebossar les boletes de pinyons, agafar un grapat gener\u00f3s de pinyons i pressionar la boleta entre les dues mans fent moviments rotatius per tal que s\u2019enganxin els pinyons.<br \/>\nPosar-los a la safata i just abans de ficar-los al forn, tornar-los a pintar amb la barreja de rovell i alm\u00edvar.<\/p>\n<p>Farem servir el mateix procediment per fer els d\u2019ametlla, amb el granet.<\/p>\n<p>Per fer els de coco tamb\u00e9 agafarem una mica de massa, hi afegirem el coco ratllat, ho amassarem una mica i farem una \u201cbutifarra\u201d que seguidament tallarem a trossets m\u00e9s petits. A cada un d\u2019ells li darem forma de cono i li tirarem una mica de coco ratllat per sobre.<\/p>\n<p>Per fer els de caf\u00e8, primer el disoldrem amb una mica d\u2019aigua i ho afegirem a la massa, seguidament ho amassarem una mica, en farem tamb\u00e9 boletes i les rebossarem en sucre llustre.<\/p>\n<p>Per fer els de codony aplanarem una mica la massa, la farcirem de codony i l\u2019embolicarem en forma rodona. Seguidament la tallarem i les rebossarem de sucre llustre.<\/p>\n<p>Per fer els de cacau, tamb\u00e9 dissoldrem la xocolata amb pols i la barrejarem amb la massa. Tamb\u00e9 els hi podem donar un bany de cobertura de xocolata.<\/p>\n<p>A tots ells els hi podem donar la forma que la nostra imaginaci\u00f3 ens dicti.<\/p>\n<p>Quan els tinguem fets, els posarem damunt d\u2019una safata de forn amb pa d\u2019\u00e0ngel a sota, d\u2019aquesta manera un cop cu\u00efts si queden una mica enganxats al pa no passa res, tamb\u00e9 ens el menjarem. Els posarem al forn (gratinador) a 250 graus durant uns 7 minutets (controlarem per\u00f2 que no se\u2019ns rosteixin massa).<\/p>\n<p><strong>Tamb\u00e9 els podem fer amb dol\u00e7 de moniato:<\/strong><\/p>\n<p>El dol\u00e7\u00a0de moniato\u00a0s\u2019elabora\u00a0com si\u00a0fossis\u00a0a fer\u00a0una melmelada:\u00a0la\u00a0mateixa\u00a0quantitat\u00a0de moniato\u00a0que\u00a0de sucre\u00a0i a\u00a0remoure\u00a0a foc baix\u00a0uns 30\u00a0minuts. S\u2019afegeix el\u00a0suc\u00a0d\u2019una llimona\u00a0perqu\u00e8 no\u00a0s\u2019oxidi.<\/p>\n<p>Posem\u00a0a coure\u00a0els moniatos\u00a0amb\u00a0pell, d\u2019aquesta\u00a0manera\u00a0no\u00a0li\u00a0entra\u00a0aigua,\u00a0uns 25-30\u00a0minuts\u00a0o fins\u00a0que estiguin\u00a0tendres.<br \/>\nTraiem\u00a0d\u2019aigua\u00a0i\u00a0deixem\u00a0refredar. Una\u00a0vegada\u00a0que\u00a0estiguin\u00a0temperats,\u00a0els\u00a0pelem\u00a0i\u00a0els\u00a0xafem\u00a0en un\u00a0colador\u00a0perqu\u00e8\u00a0deixin anar\u00a0l\u2019aigua que\u00a0tingui.<br \/>\nEn\u00a0una olla\u00a0posem\u00a0el moniato\u00a0el\u00a0sucre\u00a0i\u00a0el suc,\u00a0ho\u00a0barregem\u00a0i\u00a0sense\u00a0deixar\u00a0de remoure\u00a0el tenim\u00a0a foc baix\u00a0uns 30\u00a0minuts\u00a0o fins\u00a0que\u00a0s\u2019evapori\u00a0el l\u00edquid i\u00a0ho deixem\u00a0refredar i reposar.<\/p>\n<p><strong><br \/>\n<\/strong>Per fer la massa, barregerem\u00a0el dol\u00e7
