Pes mescla en fred:<br \/>\nFicau en un recipient apte per encalentir:<br \/>\n822 g de llet sencera<br \/>\n256 g de crema (nata) 35%.<br \/>\n\u2026\u2026\u2026\u2026\u2026\u2026\u2026\u2026\u2026.<br \/>\nAfegiu-hi en fred i remenant amb una batedora manual:<br \/>\n126 g de llet en pols descremada<br \/>\n370 g de dextrosa<br \/>\n&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-<\/p>\n<p>Afegiu a partir de 40\u00ba:<\/p>\n<p>16 g neutre per a cremes<br \/>\n10 g de sal<br \/>\n\u2026\u2026\u2026\u2026\u2026\u2026\u2026.<br \/>\nEl conjunt s&#8217;eleva fins a 85\u00ba i despr\u00e9s es deixa refredar. En arribar als 4\u00ba s&#8217;hi afegeix:<br \/>\n400 g de tap de cort\u00ed capolat i passat pel colador.<br \/>\nDeixau-lo madurar i posau-lo refredar.<\/p>\n<p>[\/ezcol_1half_end]<\/p>\n<p><strong>Elaboraci\u00f3<\/strong>:<\/p>\n<p>Per al can\u00f3: Estirau la pasta empastifada amb un pinzell de la barreja de nata i sucre. Quan la pasta estigui humida, enrotllau-la sobre un con met\u00e0l\u00b7lic donant-li aquesta forma. Enfornau-la a 180\u00ba durant 10 minuts aproximadament fins que quedi daurada. Pintau els cons amb l&#8217;oli i desemmotllarau-los.<\/p>\n<p>Per al farcit: Mesclau l&#8217;aigua amb la polpa de tap de cort\u00ed. Donau-li un bull i filtrau-la. A aquest suc se li afegeix sucre. Es remou i es posa a bullir fins que adquireix una temperatura de 120\u00ba. A part, muntau les clares amb la resta del sucre a punt de neu i, sense deixar de batre, hi afegiu en forma de fil la barreja anterior. Continuau batent fins que es refredi. Reservau-ho.<\/p>\n<p>Presentaci\u00f3: ompliu els canons amb la crema de tap de cort\u00ed, intercalant-hi alguns trossets que quedin del filtrat de la polpa.
