{"id":71910,"date":"2014-01-22T19:45:11","date_gmt":"2014-01-22T18:45:11","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/recepta-de-canelons-de-bolets"},"modified":"2022-09-29T10:01:31","modified_gmt":"2022-09-29T08:01:31","slug":"recepta-de-canelons-de-bolets","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/de\/recepta\/recepta-de-canelons-de-bolets","title":{"rendered":"Recepta de canelons de bolets"},"content":{"rendered":"<p><strong>Ingredients<br \/>\n<\/strong><em>Per a 4 persones<\/em><\/p>\n<p><strong>Dels canelons:<\/strong><\/p>\n<ul>\n<li>16 plaques de canelons<\/li>\n<li>500 g de bolets variats<\/li>\n<li>50 g de Pedro Xim\u00e9nez (o vi de Porto)<\/li>\n<li>1 ceba mitjana<\/li>\n<li>2 alls<\/li>\n<li>3 cullerades rases de farina de blat de moro (Maizena o similar)<\/li>\n<li>80 g de foie micuit d\u2019oca<\/li>\n<li>4 cullerades d\u2019olii d\u2019oliva<\/li>\n<li>sal<\/li>\n<li>pebre bo<\/li>\n<li>60 g de formatge parmes\u00e0 ratllat<\/li>\n<li>60 g de mantega freda<\/li>\n<\/ul>\n<p><strong>De la beixamel:<\/strong><\/p>\n<ul>\n<li>50 g de mantega<\/li>\n<li>50 g de farina<\/li>\n<li>600 g de llet<\/li>\n<li>sal<\/li>\n<li>nou moscada<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3:<\/strong><\/p>\n<p>Per preparar la recepta de canelons de bolets, netejau els bolets i tallucau-los. Pelau la ceba i els alls i picau-los ben fins.<\/p>\n<p>Posau la farina de blat de moro dins una tassa i abocau-hi el Pedro Xim\u00e9nez. Deixau reposar la mescla durant 5 minuts abans de remenar. Dissoleu ara la farina en el vi i reservau la mescla.<\/p>\n<p>Posau una paella al foc amb l\u2019oli. Sofregiu-hi la ceba i l\u2019all a poc foc durant 10 minuts. Afegiu-hi els bolets i coeu-los a foc viu durant 5 minuts. Incorporau-hi el foie trossejat i deixau que es fongui. Salpebrau el conjunt. Afegiu-hi la farina de blat de moro dissolta en el vi. Remenau nom\u00e9s fins que la mescla prengui consist\u00e8ncia i retirau la paella del foc. Tastau-ho i rectificau de sal si fos prec\u00eds.<\/p>\n<p>Bulliu les plaques de canelons en aigua salada abundant. Colau-les, refrescau-les amb aigua i posau-les damunt un peda\u00e7 blanc ben net perqu\u00e8 degotin.<\/p>\n<p>Per preparar la <a title=\"V\u00eddeo explicatiu\" href=\"http:\/\/youtu.be\/iLAVdTCbayw\" target=\"_blank\" rel=\"noopener\">beixamel<\/a>, posau la mantega dins una olla o paella. Quan s\u2019hagi dissolt, afegiu-hi la farina i mesclau-la amb la mantega remenant seguit seguit amb la batedora manual de barnilles. Coeu el conjunt almenys durant 2 minuts. Incorporau-hi la llet poc a poc sense parar de remenar. Al principi sembla que far\u00e0 grums, per\u00f2 poc a poc l\u2019aspecte va canviant a mesura que hi afegim llet i remenam. Quan hi hagueu incorporat tota la llet, deixau bullir la salsa encara 5 minuts al m\u00ednim i retirau-la del foc. Afegiu-hi sal i nou moscada ratllada al vostre gust.<\/p>\n<p>Untau amb mantega una rostidora.<\/p>\n<p>Posau una culleradeta ben plena de farciment enmig de cada canel\u00f3, enrotllau-lo i col\u00b7locau-lo dins la rostidora (la part on s\u2019ajunten els extrems no ha de quedar a baix, perqu\u00e8 es desfarien en servir-los). Abocau-hi per damunt la salsa beixamel. Empolvorau la superf\u00edcie de parmes\u00e0 ratlla i distribu\u00efu-hi trossets de mantega.<\/p>\n<p>Enceneu el forn a 190\u00ba. En ser calent, enfornau els canelons i coeu-los fins que es dauri la superf\u00edcie (20-30 minuts).<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Un plat ideal per aquestes
