{"id":72606,"date":"2013-08-20T14:44:49","date_gmt":"2013-08-20T12:44:49","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/gelat-de-tambor-dametla"},"modified":"2013-08-20T14:44:49","modified_gmt":"2013-08-20T12:44:49","slug":"gelat-de-tambor-dametla","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/de\/recepta\/gelat-de-tambor-dametla","title":{"rendered":"Gelat de tambor d&#8217;ametla"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n\u2022400 g de tambor d&#8217;ametla<br \/>\n\u2022100 g de sucre<br \/>\n\u202250 ml de sucre invertit<br \/>\n\u20226 vermells d&#8217;ou<br \/>\n\u2022200 ml de llet sencera + 200 ml de nata per muntar<br \/>\n\u2022500 ml de nata per muntar<\/p>\n<p><strong>Elaboraci\u00f3<\/strong><br \/>\n1.Primer farem el tambor d&#8217;ametla, que podeu veure la recepta aqu\u00ed. En picarem 200 g fins, i els altres 200 g els deixarem una mica m\u00e9s gruixats. Tamb\u00e9 podeu deixar qualque tros per decorar. Ho reservarem.<br \/>\n2.Per fer el gelat posarem 200 ml de llet i 200 ml de nata dins una olleta i ho encalentirem sense deixar-ho bullir.<br \/>\n3.Amb una batedora, blanquejarem el sucre amb els vermells d&#8217;ou (podeu guardar els blancs al congelador i fer-los servir un altre dia).<br \/>\n4.Afegirem la mescla de llet i nata calenta als ous, sense deixar de batre, i ho tornarem a posar dins una olla i al foc, repetint l&#8217;operaci\u00f3: encalentir-ho sense deixar que bulli, i veureu com torna esp\u00e8s.<br \/>\n5.Abocarem la mescla dins un bol prou gran, i hi afegirem els 500 ml de nata sense deixar de batre amb unes varetes. Aix\u00f2 \u00e9s la mescla final, que haur\u00e0 de reposar unes 4 hores dins la gelera.<br \/>\n6.Quan la mescla \u00e9s prou freda, podem passar a fer el gelat amb un aparell, i hi afegirem el tambor d&#8217;ametla picat, quasi al final.<br \/>\n\u2022Amb un aparell especialitzat: seguir les instruccions.<br \/>\n\u2022Amb thermomix: congelar la mescla dins unes safates per fer gla\u00e7ons, i triturar-ho despr\u00e9s de que s&#8217;hagi congelat.<br \/>\n\u2022De manera manual: posar la mescla dins un recipient herm\u00e8tic i a dins el congelador, treur la mescla cada cert temps i remanar-ho, per aix\u00ed evitar que cristal\u00b7litzi i poguem aconseguir una textura m\u00e9s cremosa.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1.Primer farem el tambor d&#8217;ametla, que podeu veure la recepta aqu\u00ed.
