Simplement necessitarem un quilo de peix de roca i aigua. Hi podeu afegir verdura i fer-ne de m\u00e9s per congelar. Sempre va b\u00e9 tenir-ne per preparar sopes, cremes i arrossos. Sofregim una mica el peix dins l&#8217;olla, hi aboquem l&#8217;aigua i deixem bullir a foc lent.<\/div>\n<div><\/div>\n<div>Per fer la picada, podem utilitzar un morter o una picadora el\u00e8ctrica. Tallem tots els ingredients en bocins petits i els triturem. La reservem.<\/div>\n<div><\/div>\n<div>Per preparar l&#8217;arr\u00f2s sec, en primer lloc, donarem una sofregida a les gambes, volta i volta, i les deixavarem per quan l&#8217;arr\u00f2s estigui gaireb\u00e9 a punt. Sofregim la s\u00edpia i hi aboquem la picada. Deixem que cogui b\u00e9 i hi aboquem l&#8217;arr\u00f2s:\u00a0una tasseta i mitja\u00a0de caf\u00e8\u00a0per comensal. El barregem b\u00e9 amb la picada i deixem que sofregeixi un minutet perqu\u00e8 n&#8217;absorbeixi el sabor. A continuaci\u00f3, hi afegim el brou: dues tasses per cada tassa d&#8217;arr\u00f2s. Deixem que cogui segons les instruccions de l&#8217;env\u00e0s. Cada arr\u00f2s ha de menester un temps de cocci\u00f3 depenent de la varietat i el plat que preparem. Per sobre, hi posem uns blins de safr\u00e0 i un pessic de colorant alimentari. Amb l&#8217;ajuda d&#8217;una cullera, l&#8217;escampem b\u00e9.<\/div>\n<div><\/div>\n<div>Quan l&#8217;arr\u00f2s estigui gaireb\u00e9 a punt, hi col\u00b7loquem les gambes per sobre, apaguem el foc, tapem amb un drap i el deixem reposar un o dos minutets.
