Per facilitar el tall de les alberg\u00ednies, els podem treure un tira prima de pell longitudinal, aix\u00f2 ens ajudar\u00e0 que el ganivet no llenegui. Un cop tallades, deixam les rodanxes dintre un bol amb llet i una mica d\u2019aigua durant dues hores, per rebaixar-ne l\u2019acidesa.<br \/>\nA continuaci\u00f3 posam una paella a foc mitj\u00e0 amb un dit d\u2019oli i, mentre s\u2019escalfa l\u2019oli, traiem les rodanxes del bol i les eixugam amb paper de cuina. Una vegada eixutes, fregim les rodanxes d\u2019alberg\u00ednia fins que quedin una mica rosses i les deixam reposar un minut en un plat cobert amb paper de cuina.
