{"id":73769,"date":"2012-03-14T10:35:14","date_gmt":"2012-03-14T09:35:14","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/recepta-filet-de-gall-amb-verdura-fresca"},"modified":"2022-04-09T12:19:32","modified_gmt":"2022-04-09T10:19:32","slug":"recepta-filet-de-gall-amb-verdura-fresca","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/de\/recepta\/recepta-filet-de-gall-amb-verdura-fresca","title":{"rendered":"Filet de gall amb nage de verdura fresca"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p><em>Per a dues persones<\/em><br \/>\n&#8211; 1 gall<br \/>\n&#8211; 1 pastanaga<br \/>\n&#8211; 1 xampiny\u00f3 blanc gros<br \/>\n&#8211; 1 ceba fresca o sofregit<br \/>\n&#8211; 1 bulb de fonoll<br \/>\n&#8211; 1 rodanxa de gingebre fresc, sense pelar<br \/>\n&#8211; Vi blanc sec<br \/>\n&#8211; Nata<br \/>\n&#8211; 1 gra d\u00b4all<br \/>\n&#8211; Sal<br \/>\n&#8211; Arr\u00f2s integral bullit per a la guarnici\u00f3<\/p>\n<p><strong>Preparaci\u00f3<\/strong><\/p>\n<p>En una cassola o paella amb tapa posam a foc lent, el vi blanc sec, un rajol\u00ed d&#8217;aigua, el filet de gall, el gra d&#8217;all laminat fi, la pastanaga pelada i filetejada, una mica menys de mitja pe\u00e7a de bulb de fonoll tallat en juliana fina i el xampiny\u00f3 filetejat fi. Hi afegim una mica de sal i ho deixam bullir amb la tapa, perqu\u00e8 cogui en el seu mateix vapor.<\/p>\n<p>En terme <em>nage<\/em> es refereix a la verdura tallada fina i cuita amb el mateix brou que el producte principal, de manera que serveix per aromatitzar el plat i tamb\u00e9 per servir-la com a guarnici\u00f3. \u00c9s important tenir en compte el temps de cocci\u00f3 del producte, en aquest cas el gall es cuina en nom\u00e9s dos minuts, de manera que la verdura queda al dente i cruixent.<\/p>\n<p>En estar el gall, hi afegim un rajol\u00ed de nata perqu\u00e8 lligui la salsa i el sofregit. Perqu\u00e8 no perdi color ni textura, hi afegim la rodanxa de gingebre, tornam a tapar per acabar de coure amb el suc durant mig minut m\u00e9s i ho retiram del foc.<\/p>\n<p>Escalfam una raci\u00f3 d&#8217;arr\u00f2s integral bullit i la posam dins un plat fons, al costat, el <em>nage<\/em> de verdures a manera de llit i, a sobre, el filet de gall. Hi afegim la salsa i ho decoram amb el sofregit i el medall\u00f3 de gingebre.
