Un concepte gastron\u00f2mic a trav\u00e9s del qual Joel ofereix una versi\u00f3 dels plats m\u00e9s destacats que ha apr\u00e8s a les 21 cuines amb estrella Michelin per on ha passat.<\/p>\n<p>El resultat \u00e9s una\u00a0<strong>combinaci\u00f3 de tapes i racions inspirades en els grans de la cuina<\/strong>\u00a0com Ferran Adri\u00e0, Joan Roca, Eneko Atxa, entre altres.<\/p>\n<p>Hi podeu tastar des de l&#8217;oliva esf\u00e8rica amb anxova dels germans Adri\u00e0 o\u00a0 l&#8217;ostra, clorofil\u00b7la, herbes i xampany de Mart\u00edn Berasategui, fins a unes croquetes de pollastre rostit i unes patates braves. Tamb\u00e9 hi cuinen plats del m\u00f3n com el ceviche i els tacos de cochinita pibil.<\/p>\n<p>Tamb\u00e9 hi trobareu tapes d&#8217;autor del mateix Joel com el canel\u00f3 d&#8217;alvocat amb quinoa o la broqueta de xot ras-alhanut; a m\u00e9s d&#8217;un selecte assortiment dol\u00e7 com la xocolata, pa, oli i flor de sal o la tarta tatin amb xantill\u00ed i brandi Suau de 15 anys.
