Aquesta sessi\u00f3 t\u00e8cnica, creada fa quatre anys per la IGP Sobrassada de Mallorca i la DO Binissalem, i a la qual s&#8217;ha sumat la DO Pla i Llevant en les dues darreres edicions, t\u00e9 com a objectiu la formaci\u00f3 cont\u00ednua dels panells de tast d&#8217;aquestes marques de qualitat.<br><br>En aquesta ocasi\u00f3, 42 professionals van participar en una jornada centrada en l&#8217;intercanvi de coneixements, que va tenir lloc el 9 de juliol, una eina imprescindible per garantir el rigor, l&#8217;autenticitat i la fiabilitat en les avaluacions sensorials dels productes agroalimentaris de les illes.<br><br><strong>Dels secrets del pernil a la revoluci\u00f3 del vermut<br><\/strong>El programa va arrencar amb el pernil de la DOP Los Pedroches. Juan Luis Ortiz, secretari general i director t\u00e8cnic del Consell Regulador, va oferir un tast comentat on va desgranar les caracter\u00edstiques organol\u00e8ptiques que defineixen l&#8217;excel\u00b7l\u00e8ncia d&#8217;aquest producte. A m\u00e9s, Ortiz va reivindicar el paper de les denominacions d&#8217;origen com a aut\u00e8ntics motors de desenvolupament i protecci\u00f3 del territori.<br><br>La segona part de la jornada va estar dedicada al m\u00f3n del vermut, condu\u00efda per Jos\u00e9 M. Natta, mestre vermuter, doctor en Qu\u00edmica i president de l&#8217;Associaci\u00f3 de Periodistes Gastron\u00f2mics de Balears. Despr\u00e9s d&#8217;explicar-ne l&#8217;evoluci\u00f3 hist\u00f2rica i la import\u00e0ncia tant dels bot\u00e0nics com del vi base, Natta va guiar un tast de sis vermuts, entre els quals va destacar una refer\u00e8ncia premiada als World Vermouth Awards 2025.<br><br>La jornada es va cloure amb un espai per fer xarxa entre els assistents, que van poder compartir experi\u00e8ncies mentre degustaven
